Fish-The Best Deep Fried Tilapia with A Different Twist

  • When it comes to Deep Fried Whole Tilapia, there is no such thing as too many herbs or seasonings for this fish and its batter. Deep Fried Whole Tilapia always has a very nice, tasty and crunchy sear.
    This enjoyable recipe by Eats By Eyah is prepared with a different twist lightly dredged in Plantain Fufu Flour. Fufu Flour is a specialty flour specifically formulated to produce fufu, a close resemblance of dumpling. It can also be used for frying meats, fish and poultry.
    The golden crunchy coating of this deep fried tilapia, takes this recipe over the edge and is a must try. Can be eaten with fried plantains, cassava fries, couscous, Liberian Dry Rice, Attieke, sweet potatoe fries, French Fries, vegetable salad or by itself and served with any of the various hot sauces of choice and to your liking.
    INGREDIENTS:
    • 2 Large Whole Tilapia
    • 1 Small Onion
    • 2 Large Habanera Peppers to your liking
    • Liberian Cayenne Pepper, or of choice
    • 1 ½ Tsp. Knorr Seasoning, or of choice
    • Sprinkles of Lawry’s Season Salt, or of choice
    • Garlic Cloves
    • Canola Oil, or of choice
    • 2 Tsp. Organic Liberian Granulated Basil, or of choice
    • 2 Tsp. Authentic Liberian Seasoning, or of choice
    • 2 Maggie Bouillon Cubes, or of choice
    Fried Tilapia Batter:
    • 1 Cup of Tropiway Plantain Fufu Flour or of choice
    • Sprinkles of Granulated Garlic
    • Sprinkles of Granulated Black Pepper
    • Sprinkles of Lawry’s Season Salt
    • Sprinkles of Onion Powder
    • 2 Tsp. Organic Liberian Granulated Basil, or of choice
    • 2 Tsp. Liberian Cayenne Pepper or of choice
    Sauces Of Choice:
    • Authentic Liberian Fried Pepper
    • Old Bay Hot Sauce
    • Ghost Pepper Sauce
    EQUIPMENT:
    Chopper, Mortar-Pestle or Blender
    Deep Fryer, Cast Iron, Wok or Dutch Oven
    Teaspoon
    Fork
    Thermometer
    Prep Bowls
    Measuring Cup
    Paper Towel
    Saran Wrap
    Cooking/Basting Spoon
    Cutting Board
    Paring Knife
    Cooking Gloves
    Pan or Mixing Bowl
    Baking Rack
    Thong
    STEPS-YOU CAN DO IT:
    1. If Tilapia is not pre-cleaned, rinse with cold water, remove gills, scales and the insides; wipe dry with paper towel.
    2. Using a sharp knife, cut vertical slits on both sides of the fish, place in a pan and reserve.
    3. In a chopper, mortar or food processor combine the onion, pepper, herbs and all seasonings.
    4. With gloves on, apply mixture on the entire fish including the insides.
    5. Cover and reserve to the seasoned fish to marinate for 30 minutes to an hour.
    6. Preheat oil in a deep fryer, dutch oven or cast iron pot until temperature reaches 300 degrees on instant read thermometer. If using a deep fryer, pour oil to the measurement line and if using a pot/wok use your best judgment and pour approximately 2” oil must cover the Tilapia.
    7. While oil is preheating, whisk together the fufu flour, herbs and seasonings.
    8. When the oil is hot, put in the Tilapia and fry each side in medium heat for 3-4 minutes until golden brown or to your liking.
    9. Place fried Tilapia on a rack or on a paper towel lined bowl or plate and let it drain for 5 minutes.
    10. Arrange on a serving plate.

    I have to try this!!! You probably said, but where would I find the fufu flour?

      Please do it is really delicious. The fufu flour can be purchased on Amazon, Walmart online or any African, Asian or Spanish Food Store.

    OMG! I did not know that using the fufu flour makes a big difference in how the fish turns out!! I made mine, and I tell you. My family and friends loved it! It was made very spicy. I just want to say thank you for gracing our homes wit such great cooking!
