Both hands in the direction you want to go, along with outside leg pressure at the rib cage.

Sure
whats the thing you are using with the reins does it keep the head down?
It's called a German Martingale. No, it doesn't keep the horse's head down. It's a simple tool that when used correctly, helps a horse learn to "give" to the rider's hands. Definitely not necessary but sometimes nice to have.
What is a good bit to train your horse
Hi Leanne, the bit depends on the horse's level of training. The most common training bit is the loose-ring snaffle... which is the bit shown in this video.

You use the reins and leg pressure in time with the horse's response... or in time the horse's steps.
