If you're on the US configurator looking at the interior colors, you have to scroll down to see Fjord Blue. It's still available on the US site (I'm looking at it right now)
Don't have a solid answer yet but I think some cars will get iDrive8.5 and some won't, like X5, X6, X7,5 series and 7 series will likely get it, but 2 series, 3 series, 4 series likely won't
