I had visited Udaipur during December 2021. Due to time constraints we missed few places.
1) U can visit Bahubali hills to experience sunrise
2) Haldighati, Eklingji/Nathdwara cannot be missed.
3) Kumbhalgadh fort is a must visit (we missed)
4) Experience udaipur shamlaji road. One the best road for bike ride

Yes , its possible , but you have to choose budget hotels or you can also go for hostels , in udaipur there are very good hostels options as well

I shall be coming fro Falna by morning bus. Check in is about 1100. I shall complete mandir, city palace pichoda lake etc on first day. ON 2nd day ,saheli ,sas bahu temple ,sajjan garh for palace etc by hiring a scooty . Does it sound good ?
Yes looks fine. In second day evening you can spend your time near fateh sagar lake or Ambrai Ghat
