Napa Valley, good wines, but Sonoma Valley Wines are superior. Try Gundlach Bundschu, Kenwood Vineyards, or even Dry Creek. The best reds come from Sonoma County.
I feel it makes red meat taste more like it does at a restaurant, but not too salty. I’ve never been a big fan of salt. I’m also on a low sodium diet. I’ve done a dry brine with ribeyes. 🎹💙

Oh my God I do short ribs all the time you put so much s*** in that PAN so many spices of yours what is wrong with wine beef and the vegetables that's the way French make it are you kidding you put so much s*** in there it's like sodium based food gemini and you didn't even cover them and you did not reduce your sauce down beautifully and thick I can help you with that

Thanks for the tip about browning the meat with salt only. Lots of people do salt and pepper which isn’t necessarily a good thing.

Very nice! What was the oven temperature? I would suggest squeezing that cooked garlic bulb into the pan sauce at the end, then thickening the sauce.
Looks great! Did you finish the gravy with cold butter? I usual make a rue then use the pan drippings to make the gravy just asking.
