Cottage Cheese should be put into a blender to smooth the curds, in Germany cottage cheese is smooth when you buy it, maybe in the US they are to lazy to cream it, it's so much easier to use in recipes like cheese cake or spread on bread
I'm making an apple noodle kugel today and while I have a tried and true recipe I thought I'd do a search to see if I could find alternatives. Your recipe looks very easy. Thank you so much for not putting in raisins! The only thing is that I don't like cottage cheese in my kugels. The cottage cheese never seems to melt completely and I don't think that it's supposed. Maybe it's a texture thing for me. If I omitted the cottage cheese, could I add more sour cream or would that ruin the whole thing?
Hi! This is a delicious kugel! Would you consider substituting Ricotta Cheese for the Cottage Cheese?? We have made Kugel with Ricotta instead, and it does work! That would give you a smoother texture? We have not tried that substitution in this specific recipe, but we are thinking it could solve your texture concerns and probably would be DELICIOUS! Would you let us know how it turns out if you try that???

I am trying to stay away from dairy and sugar and it looks like your recipe has much more dairy and sugar than mine. It's probably more rich, sweet and delicious because of it! Today, though, I think I will stick with my recipe but yours is definitely one to try. I'll check the rest of your recipes, website and Facebook page too. It’s actually delicious with the curds! But I think would be great either way. We will have to try a smooth version, as well!
