    For others that may pursue this idea, pick the approximate center of the circle to be removed. Mark the center with a pen or felt tip marker. Drill a small hole through this center point. Then, you can turn the cover over, or upside down, and observe where that center appears, relative to the available surface underneath. Simple enough to make an adjustment from the position of the small drill hole. It is going to be removed anyway.

    from others I have seen you want to leave a little gap to let some of the steam out so it does not mess up the SV pod.

    Might I suggest to cut the container lid just one inch from the Anova, but the complete width of the lid, to create a removable part of the lid so you can keep the Anova running while loading and unloading food.

      Good idea, I currently shut it down or tilt the lid and slide food in.

    Hi Ben
    Great video..when using higher temps..150 *. And/or longer temps any outside heat issues with the cooler.
    What about condensation issues..I normally use a steel pot on the stove..This lets me periodically check out
    Protein and water levels...Have a thought , one I will be incorporating in my project. Your idea of a water level line
    Around the cooler is awesome..I plan on incorporating on the opposite side a mini port hole to see in..Still working out
    The kinks of fabricating materials. One to eliminate the need to periodically lift the cover close enough to an edge
    To see the water line..and big enough to look Down on the protein. Removal plug to allow filling without lifting up..
    What do you think.

      Hello. The only issue with the cooler is the top gets warm. The bottom and sides stay cool. Because the lid sits tightly on the cooler, water levels never really move and honestly, once I have the protein in and under the water, I never check it until it’s done. The cooler does a great job of keeping the water in and preventing condensation on cold winter windows. A drain in the cooler would be cool, but I only change the water every few months and dumping it out is no big deal. We do use RO water, which prevents any sort of deposits from forming on the heater elements.

    why doesn't anyone put the hole in the middle of the middle, centered? best placement for water circulation? dremel is going to be much harder and less accurate, oops made a little notch and a BIG mess hunh?

    Is the hot glue seal holding up? Does it melt during cooking?

      It's fine. It doesn't melt while cooking and still maintains a good seal.

      I used hot glue, but the Anova is hot and it melted the hot glue and made a mess. I picked it all out and tried with nothing, but water did get between the top and bottom of the lid.
      I've ordered some high temperature, food grade, silicone sealer. It's red and they use it on smokers. The color is actually good since my cooler is red too. Amazon $7.

    You can turn the water impeller housing around. So you can see the water level lines. You have it on backwards.

      craig paterson the lines are hard to see in the Anova when in the cooler so marking the cooler fixes that issue.

      FYI - don't use hot glue. The Anova gets hot and hot glue melts all over the Anova. I picked it out and ordered some high temperature, food grade silicon sealant. It's red - and my cooler is red so - cool. Amazon $7.

      Hot glue gets up to 380 degreesF, so our 200 degreeF Sous vide is not an issue.
