  • Air Burrata is a dish from RAW's summer menu "The One & Only" - a menu with a concept to play up ingredients that take on supporting roles in main dishes. This menu highlights thinking out of the box, puts the spotlight on these "supporting" ingredients, and composes dishes around them. ​​
    The focus of the Air Burrata is olive oil - an often-overlooked ingredient that is used to harmonize an entire dish, as well as provide a pure and flavorful taste.
