I made pepper japchae rice
recipe
400g pork loin Little eggs
1 bell pepper A little potato starch
1/2 onion A little pepper
A little shiitake mushrooms A little sesame oil
A little soy sauce 1 and a half tablespoons of sugar
A little cooking liquor 1 and a half tablespoons of oyster sauce
Chop green peppers, onions and shiitake mushrooms
Shred the pork
Add a little soy sauce, cooking liquor, and eggs to the sliced pork
(Cooking alcohol has a softening effect on meat)
Add potato starch to make it look like fried clothes
Add plenty of oil and fry little by little as if frying over low heat
Remove the meat, leave a little oil and pour into the bowl
When the oil evaporates over the strongest heat, add the prepared vegetables and fry quickly
Add the roasted meat and stir-fry while pressing so that it doesn't clump together
(tip - Since the meat has been cooked in advance, cook it as quickly as possible to enhance the texture of the vegetables)
Sugar 1.5: Add the sauce in the ratio of 2 oyster sauce
(If you add a lot, it will be salty, so it is recommended to mix it in a bowl and add little by little.)
Because the oyster sauce is sticky, it is added with sake to dissolve it to give it taste and aroma.
(Alcohol is better than adding water because it vaporizes and flies away.)
Finally, lightly stir-fry with pepper and sesame oil to give it a scent.
