Great vid, we use that brand all the time but have never attempted to make ice cream with it, have you noticed that it actually say's on the can "do not freeze" !, why is that ?, I honestly don't know.
I don't remember seeing that on the label but it may just refer to freezing while in the can. On the Vitacost website's product page, it states to refrigerate or freeze after whipping.
I tried it with honey and a little bit of condensed milk it came out great
Walmart sells coconut condensed milk also
I wonder if you gently beat it periodically during the freezing process, if it would smooth those lumps out.

I've never tried it with low fat ingredients so I don't know how it would turn out. If you try it, leave a comment and let me know how it came out. 🙂
My coconut cream always ends up being watery. Probably my utensils need to be chilled as well

How long does it last in the fridge for ?
This recipe is stored in the freezer. I wouldn't keep it longer than a few weeks to prevent ice crystals/freezer burn.

… Whip it before freezing and it will be even better… After whipping you may want to put it in a silicone loaf pan…
The video shows me whipping the mixture with a mixer. I don't own a silicone loaf pan.
