I’m looking at getting a vertical smoker built because of limited amount of space. The thing that worries me is that it will be propane, will the temperature be to high in the chamber ? Gosh that bacon looks so delicious! This video was so interesting, I have never seen the process of curing bacon. I would like to try it but I don't have a smoker, is there a process I can substitute in lieu of using one.

Also I'm wondering why add more charcoal since you already have coals from the wood chunks. Why not just add more wood chunks?
