But if it's frozen won't the strawberry be solid all the way through? And once melted, won't the yoghurt get sticky?

this is bull.. how about slicing the strawberries and spread it in yoghurt in a container,preferably small for children, insert an ice cream stick in it . Then freeze it.
what comes out is a nice iced yogurt full of strawberry slices. Easy to eat , children will love it.
What's in this video has a good idea, but its not practical to eat.
