I love Jeffry Wright as the watcher. He really does the character justice. His last line in the 5th episode “How does he keep doing that?” really gave me a good chuckle
One could also see this as Groot was the one who helped save the universe by giving Stormbreaker its handle. This finale was before Infinity War and Endgame, so maybe that's what the Watcher was referring to.

They were still flying around in part of that big ravager ship by the end of Vol. 2, that's where Yondu was cremated and his remains sent out into space for his funeral. You can even see that part of it detatch from the ship in the clip used! Those shorts just take place on that ship, they probably used it as headquarters for a while. The Disney+ timeline is correct in placing it there.

Pretty sure Groot is on the Ravager “Quadrant” space ship, the front part that broke off from the exploding Eclector ship. The same Quadrant ship in Vol. 2 that Kraglin landed on the Ego planet and the same Quadrant ship the Guardians watched Yondu’s funeral fireworks from at the end of Guardians Vol. 2. They were inside the Quadrant looking out. The Guardians Vol. 2 tag scene of Teenage Groot in his room is also on the Quadrant ship. Groot is on the Quadrant ship for the nose and ice cream episode in season 2 {Episode 2 and 4}. Same Quadrant location with Groot Season 1 {episodes 3 and 5}. See Marvel Wiki.

It reminds me of Adventure Time "The song hole" where an ancient entity mentions how only those beings of pure/innocense and those who suffered great lost/madness could percieve it. Maybe Groot is so innocent and oblivious to the workings of his reality that he can see beyond that.
I think you could be onto something between the making of Stormbreaker and then of the mutual link they all need to take to defeat Ego I can’t imagine the sound of that I am Groot but it brings chills to think about .

The Watcher is so interesting I definitely want to see more of him and definitely if possible in live action truly, in a movie.
