Hydrangeas have different coloured flowers based upon the PH of their soil. I always thought it was cool when people confused them and put a mixture of PHs on their roots to end up with some blue and some pink flowers!

I discovered this back in high-school days by mistake. Cooking and chemistry class became double the fun after that experience
What's weird is they kinda go hand-in-hand but also are very separate. If you know how enough about the chemical compound in your foods you can create some REALLY interesting flavors by cooking them together properly. Thus making food taste even better (or worse!). So being able to do both at the same time is great

I remember doing this as a kid! One of the experiments in my chemistry kit was to make homemade litmus paper. The hardest part was convincing my mom to buy a cabbage.
Why? You can even eat the boiled cabbage after. Cabbage is like the ideal food.

Yeah i think in german the cabbage is called "Rotkohl" (Red Cabbage) or "Blaukraut" (Blue Herb/Cabbage) in different regions because they were eaten in different dishes and went red/blue depending if the dish was more acid or basic. Thus its called by its colour, which is both red and blue funnily
My dad used to show me this as a kid. He’s a chemistry teacher. Whenever we have red cabbage for dinner, he’ll always insist on showing it to us again. : )

In German this kind of cabbage has different names depending on where you are. These names are "Rotkohl" ("Red cabbage") or "Blaukraut" ("Blue herbs"). From those phrases you can figure out, which pH the soil in this region has.
My bf and I were cooking cabbage, and I mentioned the reactive properties to him. He hadn’t before known, so we added lime juice and baking soda to wherever the juices were. Chemistry is always fun with colors! Was nice to see him enjoy it as much as I did.

One time in school a class did this in the science lab and for the next few weeks the hall near the lab (where my class was) smelt horrible. We even eventually went into the science lab and it was 3x worse.
In Germany it's called either Rotkohl (red cabbage) or Blaukraut (blue cabbage) depending on where you live. Red cabbage people cook it with vinegar, blue cabbage people add natron to it, which explains the different colors XD
Also works with most fruits, vegetables and grains with purple pigmentation from anthocyanins. This includes: Blueberries, black beans, red onion, blue corn among other things. I made pH paper by soaking and drying paper towels dipped in black bean water and it works pretty well. Not ideal if you're looking to pin down a pH but very practical when I was working with a strong acid to clean up some rocks. The acid is clear so it was pretty useful when looking for any small spills since the paper would turn bright pink, almost red anywhere it touched the strong acid.
My blue jeans acted as litmus paper when I spilled battery acid on them. The spots turned pink, then the spots became holes.
This... is actually very handy info. I feel like this could be used when planting flowers or foods to determine PH ultra cheaply. It wouldn't be extremely accurate, but it could probably tell you what kind of dirt you're looking at before you begin.

My kids and I dye Easter eggs every year. I like to make my own dyes, cabbage for blue, beets for red, and turmeric for yellow. Every year my kids and I use vinegar and baking soda to change the color of the cabbage dye, it’s fun and educational.
Hey, I remember this experiments from an old webgame based on the ZOOM show by PBS. It had something to do with bottle cork-launchers fueled by reacting baking soda with acid. They used cabbage extracts to determine if a common household liquid was either an acid or base.
I feel OLD now.

It's not that difficult to source strong bases and acids in various stores tho, so you could do it at home. NaOH is ridiculously easy to source as drain cleaner, same for dilute acids.
You can still do it at home, and it's super easy too! If you're able to get your hands on a red cabbage you just follow the steps as seen here and test a bunch of fruits or chemicals around the house with a few drops. Try things like lemon juice, milk, soap, tap water, or toothpaste. (I'm an educational lab technician, feel free to ask any science questions and I'll try my best to help!)

I remember in elementary school I did an experiment for a science fair using red cabbage. I believe I was turning bars of soap green. I can't remember the details, but I won second place (after the kid who did electricity and water). Seeing this made me realize this must be how it worked (I got the idea from a book that explained what to do, but not much into the why, I believe)

Yeah I had to do this and it wasn't fun. Got some cabbage, put it into the fridge and forgot about it until the evening before the deadline. Cabbage looked fine from the outside, but the inside was completely rotten. No time to get new cabbage so I had to make a rotten cabbage tea. Smells awful, but still works.

One year ago my science teacher had my class to make this hing and it was surprisingly easy and fun. I really recommend you to do it too, because then you can eat the cabbage and it'sdelicious.
We had to try different experiments, like blowing with a straw in it to see how would it change with the co2 in our breath, we had to mix in it different home products like bleach and juices. Then we had to balance acid and basic again to obtain the original colour. I learned a lot about the substances' ph.

Finally a chemistry experiment I've actually done before!
I did this with my daughter a few months ago and it blew her mind. she thought it was amazing. she just told me her school hasn't done this yet, only some experiments with milk (making cottage cheese) and glitter so far. there's still time.

One of the few things I recall doing in Chemistry at School, things like this are why I loved the subject
Why is the red cabbage purple? Because it gets its purple-reddish color from the flavonoid anthocyanin and the acidity level of the soil where it's grown. Like most colorful vegetables, it's highly nutritious, low in fat and calories, and has numerous health benefits.
Fun fact: It has natural pH indicators.
What are the pH values in the vials? I'm curious to see what sort of range this has as an indicator!
Cabbage as a pH indicator shows the whole pH scale, 0-14. The purple vial in the middle (with no color change), indicates neutral pH. The pink is 0, and the yellow is would be 14. Just did this lab in chemistry class last week, pretty cool!

Haha amazing. When I got a chemistry set as a wee lad back in the day, there was actually instructions (and a color reference sheet) for exactly this in case you ran out of the supplied PH indicator papers.

Yes! I love the red cabbage, I used it to test solutions as a laboratory project when I was in high school! But I blended mine and strained it, this is a way better approach though…😂

Did this when I was young and then left a mug of red cabbage juice under my bed for later and promptly forgot about it.
Some time later my mother, wondering what the smell was, discovered a Mexican hat shaped growth had erupted from the mug and was slowly spreading across the carpet.
It appears that this Ph indicator is also a nutritious growth medium. :-)
I did it too, and kept the remaining in old plastic bottle. I forgot about it too.
Few days later my mom found it, and it was stinking bad. It too had a mushroom shaped green algae/fungi/plant in it. I had to throw it away along the container.

This is actually very fun to play with when using cabbage pigment as a dye for yarn and what not, you can achieve pretty amazing colours by playing with the pH of your dye pot ! :D

Can you let us know what pHs were for the different colors and what you used to create those so we can test pH at home when I’m out of pH strips or titration chemicals (for the pool)? Or should I just though a purple cabbage into the pool and see what color the cabbage turns? Or would it be what color the pool turns? Or if the skin sloughs off the swimmers in my “no trespassing” pool?
