Ingenious solution mate. Wouldn't it just be easier if a bunch of us just petitioned Knorr to start producing it again??? If they still don't do it, why don't you start up production and sell it as an artisanal hand-made product on bushcrafter, prepper and army surplus sites the world over? I'm entirely down for a petition and I am preparing to make my own Erbswurst soon, I figure between Homemade Erbswurst and homemade Hardtack, I could have a large supply of long term storable backpack rations
Too many years of worry free plenty. I get why they shut down production but if they could have held out for just 2 more years, I believe people the world over again understand the value of this product. Thank you for the recipe. I will be making some myself as I am greatly fond of pea soup as is and this does make it incredibly convenient even at home.

Making this now with multiple substitutions. Half went straight into the pot for dinner (the remainder of whatever is in the pot being used throughout the week) and then 11 tea cup lights worth of Erbswurst being dried. (I substituted vegetable bullion cubes for vegetable stock powder, and frozen mixed vegetables for dried ones, increased the amount about 4 fold due to drying amounts). It is a hell of a lot harder to blend with water being there, other than that, all seems to be going well.
Hey Jeremiah, great that you have tried it! Yes they don't blend that easy when the ingredients are not perfectly dry. You can also try add some type of vegetable fat before blending everything. But in that case you will need to build a press to form the tablets. This way it is much closer to the last product that was sold. I have found, for me, that if I cook the bacon and onions that dark that it imparts a bitter taste that doesn't agree with me. Much better luck frying both until they are golden and not brown. Great idea adding the vegetable stock/soup base. Will be trying that on my next batch.

Thanks, indeed it would make the result closer to the original product when you use some kind of grease instead. However, this way you dont need some kind of press to make them and can use tea candles instead.
For survival purposes a saturated fat is essential to life….probably more so than the protein. I’d potentially combine this dried bouillon with some beef pemmican made with large quantities of lard or tallow….then it’s a win win all round….you could live on such a combo. 🙂💕
Hi John, thanks for your comment. This is the Swedish Army mess kit. It is kind of hard to get the original version. I got mine on Ebay. There are tons of replicas out there which are far less expensive. But I cannot tell you how the quality is. The original ones come with an alcohol stove made by trangia. @@BushcraftBuddy Thank you for your reply. All I can find on potato sausage is that it's popular in Sweden. I could never find out if that was a common ration for the Heer during WW 2. Assuming that Sajer was really there, that would lead me to believe that it was, at least occasionally. I'd have to sift through the book to find it again, but for some reason that part always stood out in my mind because I had never heard of such a food before. He also mentioned them being given yogurt to take with them at the same time. But I can't find out if these food items were exceptions or the norm. I suppose if they were the norm, they'd be better documented? I would assume that prepared food in the field would have consisted mostly of bread, sausage, soup, potatoes, and cheese plus whatever was available locally on occasion (beef, chicken, and fresh fish for example). The information on this subject seems to be rather spotty. Most are concerned with the weapons and gear.

There are a few freeze dried soup mixes available but none with meat I have found. Bring some spam... I do think the erbswurst we could get locally had mostly/only lard not meat when I was stationed in Germany in the 1980s. I could be wrong. But this recipe looked super easy to duplicate and you can tune it to your liking doing as done here.

What size are those tealight cups? If the box gives weight or burn time, that might be enough. Local ones are 38mm. by 11mm. but yours are much deeper... Thanks!
Hey there, have you done any tests to see how long this homemade erbswurst lasts, in terms of expiration date? The original erbswurst had an almost indefinite shelf life, from what I heard.
Hey hey, thank you for your message. Unfortunately I cannot really tell you how long it will last. I ate it over the period of 1-2 years and it was perfectly fine. The original Erbswurst expired after a year or so, but you can probably still eat it a lot longer. Hope that helps. All the best! Martin
Hi Harrison, personally I have not tried it out, but if you sterilise it properly, it should easily hold for a few months. Make sure to store it air tight if you want to keep it longer, so the fat does not turn rancid. Cheers, Martin

Hi Bruce, I included this step in order to kill all potential bacteria and viruses that might have ended up in the soup. This might increase shelf life a bit. A food dehydrator is probably even better to dry the tablets. If you want to store them for a longer time I would recommend you to heat the ready product to 120⁰C for a couple of minutes. Or you can also store it in the freezer. Keeping it air tight is also important so it doesn't turn rancid. Hope this helps. Cheers, Martin 🤜🏼🤛🏼
Ich wollte Erbswurst immer mal antesten, noch ie probiert. Nun weiß ich auchwarum ich die in keinem Laden mehr auftreiben kann: Die Produktion wurde zum 31. Dezember 2018 wegen zu geringer Nachfrage eingestellt. Na ja, jetzt wo du mir die genaue Zusammensetzung gezeigt hast, bin ich auch nicht mehr so scharf drauf, dünne Suppen sind nicht mein Ding. Ich dachte, das wird so was ähnliches wie Erbsensuppe, richtig dick und lecker. Auf jeden Fall mal wieder echt klasse umgesetz!!!! Gruß Arno
Hey Arno! Ja ich habe sie nach dem ursprünglichen Rezept zubereitet. Die letzte kommerzielle Version hatte Geschmacksverstärker, Verdickungsmittel und Konservierungsstoffe. Als Grundlage ist das aber gar nicht schlecht. Noch ein paar Kartoffeln rein und/oder eine Wurst. Dann schaut es gleich etwas anders aus 😉 Ist halt ein Not-Essen. LG und bleib gesund, Martin 🤜🏼🤛🏼🤠

You kind of missed a point about Erbwurst, which is the caloric content created by the fats. What you made was a bullion, not Erbwurst. Fat has a calorie content of 9 calories per gram, far outdoing carbs. It's the energy they were looking for when the original mix was developed, with just enough protein to aid in repairing muscles due to exertions. More or less a European version of pemmican. If you want a vegan version, might I suggest using coconut oil (fat)to bind the pea flour together. Also, try using vegan cellulose sausage stuffings to pack the mixture into.

The original Erbswurst was made without water and any cooking process. The starch will modify with water and heat and the tablets will not dissolve as easily. All ingredients are dry mixed and simply compressed. Substitute the freshly fried onions with dried or roasted hot dog onions and add some shortening (Crisco, Biskin, Palmin). Crisp fried bacon bits or strips are ok, if they are completely dry and crisp. Blend well, the mixture should hold together when compressed to a ball by hand. I used a piece of PVC tubing, a wooden dowel and a mallet to compress the mixture to tablets. Packing the tablets airtight is essential, otherwise the fat will go rancid. To cook, simply crumble into COLD water and heat to a boil. Keep it boiling for 5 minutes and you're done.

@@BushcraftBuddy You're most welcome. I also tried this with red lentils, which worked very well. I also just recently found a very similar product from Ukrainia if I remember it right. I found it in a russian supermarket here in Berlin. The peas are only partly broken and it comes in a square block, undivided and for 1,7 liters of water. The spicing is a little different and the finished product is somewhat 'chunkier', but the preparation is the same. Next time I visit this supermarket again, I will definitely stock up on this product.

Most of those soup mixes or bouillon's are full of salt and you don't want salt because salt attracts water and you don't want your ever words to spoil which it will eventually when it gets too moist or damp because of where you might be that's why none of the original recipes even for heart attack had really water in it but they did have quite a bit of lard... Varying types.
Here in Switzerland Bacon used to be called 'Speck-Tranchen', but the other day I saw it labeled 'Bacon' in a local Supermarkt. My guess is the recipe would also work fine with ham, or even beef jerky!

This is hard to answer since I haven't stored them for long, yet. The sterilisation step should kill all germs and make sure the foil is clean. My gut feeling says that you can store them for several years. Hope this helps.

I ground 10 tablespoons of peas in a blender and came up with something shy of 3/4 cup of pea flour (or meal, if that's the case). I like my pea soup a little more like a puree or chowder than a broth, so I added some pea flour to bring it to roughly a cup of pea...stuff. I'll dry it like that and post my results.

Hi Hogan, by heating the tablets over 120⁰C you kill all bacteria, fungi and viruses, thus sterilizing the food. So bacteria will not grow. It is not a specific function of the oven. Best, Martin

I used it in 2017 for 2.5 weeks together with rice and dried venison as exclusive food on a hike in Lapland.

Making this now with multiple substitutions. Half went straight into the pot for dinner (the remainder of whatever is in the pot being used throughout the week) and then 11 tea cup lights worth of Erbswurst being dried. (I substituted vegetable bullion cubes for vegetable stock powder, and frozen mixed vegetables for dried ones, increased the amount about 4 fold due to drying amounts). It is a hell of a lot harder to blend with water being there, other than that, all seems to be going well.
Hey Jeremiah, great that you have tried it! Yes they don't blend that easy when the ingredients are not perfectly dry. You can also try add some type of vegetable fat before blending everything. But in that case you will need to build a press to form the tablets. This way it is much closer to the last product that was sold. I have found, for me, that if I cook the bacon and onions that dark that it imparts a bitter taste that doesn't agree with me.
Much better luck frying both until they are golden and not brown. Great idea adding the vegetable stock/soup base. Will be trying that on my next batch.

Interesting using water. All the recipes I've seen use bacon grease or tallow as a binder. This reminds me a bit of making hard tack.
Thanks, indeed it would make the result closer to the original product when you use some kind of grease instead. However, this way you dont need some kind of press to make them and can use tea candles instead.
For survival purposes a saturated fat is essential to life….probably more so than the protein. I’d potentially combine this dried bouillon with some beef pemmican made with large quantities of lard or tallow….then it’s a win win all round….you could live on such a combo. 🙂💕

Hi John, thanks for your comment. This is the Swedish Army mess kit. It is kind of hard to get the original version. I got mine on Ebay. There are tons of replicas out there which are far less expensive. But I cannot tell you how the quality is. The original ones come with an alcohol stove made by trangia. And some were even produced from stainless steel. But it is impossible to get one (or at least I couldn't find one for over one year). Cheers, Martin 🤜🏼🤛🏼

@@BushcraftBuddy Thank you for your reply. All I can find on potato sausage is that it's popular in Sweden. I could never find out if that was a common ration for the Heer during WW 2. Assuming that Sajer was really there, that would lead me to believe that it was, at least occasionally. I'd have to sift through the book to find it again, but for some reason that part always stood out in my mind because I had never heard of such a food before. He also mentioned them being given yogurt to take with them at the same time. But I can't find out if these food items were exceptions or the norm. I suppose if they were the norm, they'd be better documented?
I would assume that prepared food in the field would have consisted mostly of bread, sausage, soup, potatoes, and cheese plus whatever was available locally on occasion (beef, chicken, and fresh fish for example).
The information on this subject seems to be rather spotty. Most are concerned with the weapons and gear.
Heyhey, yes I also have heard that pretty much everything was used as food during the hard times. As regular rations they used soups and so called "Eintopf" oftentimes. Yogurt also sounds rather exotic to me. Not sure whether this was used in regular rations.

There are a few freeze dried soup mixes available but none with meat I have found. Bring some spam... I do think the erbswurst we could get locally had mostly/only lard not meat when I was stationed in Germany in the 1980s. I could be wrong. But this recipe looked super easy to duplicate and you can tune it to your liking doing as done here.

What size are those tealight cups? If the box gives weight or burn time, that might be enough. Local ones are 38mm. by 11mm. but yours are much deeper... Thanks!
Hey there, have you done any tests to see how long this homemade erbswurst lasts, in terms of expiration date? The original erbswurst had an almost indefinite shelf life, from what I heard.
Hey hey, thank you for your message. Unfortunately I cannot really tell you how long it will last. I ate it over the period of 1-2 years and it was perfectly fine. The original Erbswurst expired after a year or so, but you can probably still eat it a lot longer. Hope that helps. All the best! Martin
How long would this keep at room temperature stored as shown in the video ? I plan on making some of this before my next camping trip.
Hi Harrison, personally I have not tried it out, but if you sterilise it properly, it should easily hold for a few months. Make sure to store it air tight if you want to keep it longer, so the fat does not turn rancid. Cheers, Martin

Hi Bruce, I included this step in order to kill all potential bacteria and viruses that might have ended up in the soup. This might increase shelf life a bit. A food dehydrator is probably even better to dry the tablets. If you want to store them for a longer time I would recommend you to heat the ready product to 120⁰C for a couple of minutes. Or you can also store it in the freezer. Keeping it air tight is also important so it doesn't turn rancid. Hope this helps. Cheers, Martin 🤜🏼🤛🏼
Ich wollte Erbswurst immer mal antesten, noch ie probiert. Nun weiß ich auchwarum ich die in keinem Laden mehr auftreiben kann: Die Produktion wurde zum 31. Dezember 2018 wegen zu geringer Nachfrage eingestellt. Na ja, jetzt wo du mir die genaue Zusammensetzung gezeigt hast, bin ich auch nicht mehr so scharf drauf, dünne Suppen sind nicht mein Ding. Ich dachte, das wird so was ähnliches wie Erbsensuppe, richtig dick und lecker.
Auf jeden Fall mal wieder echt klasse umgesetz!!!!

Hey Arno! Ja ich habe sie nach dem ursprünglichen Rezept zubereitet. Die letzte kommerzielle Version hatte Geschmacksverstärker, Verdickungsmittel und Konservierungsstoffe. Als Grundlage ist das aber gar nicht schlecht. Noch ein paar Kartoffeln rein und/oder eine Wurst. Dann schaut es gleich etwas anders aus 😉 Ist halt ein Not-Essen. LG und bleib gesund, Martin 🤜🏼🤛🏼🤠

You kind of missed a point about Erbwurst, which is the caloric content created by the fats. What you made was a bullion, not Erbwurst. Fat has a calorie content of 9 calories per gram, far outdoing carbs. It's the energy they were looking for when the original mix was developed, with just enough protein to aid in repairing muscles due to exertions. More or less a European version of pemmican.
If you want a vegan version, might I suggest using coconut oil (fat)to bind the pea flour together. Also, try using vegan cellulose sausage stuffings to pack the mixture into.
Thanks for your comment! Rolf has also posted a comment which is very close to yours. He suggested to press the tablets and to use Crisco, Biskin or Palmin to bind the tablets instead of using water. I know that back in the days they used only beef fat and defatted bacon as non-vegetarian components. Have you ever experimented with beef fat instead? The original Erbswurst was made without water and any cooking process. The starch will modify with water and heat and the tablets will not dissolve as easily. All ingredients are dry mixed and simply compressed. Substitute the freshly fried onions with dried or roasted hot dog onions and add some shortening (Crisco, Biskin, Palmin). Crisp fried bacon bits or strips are ok, if they are completely dry and crisp. Blend well, the mixture should hold together when compressed to a ball by hand. I used a piece of PVC tubing, a wooden dowel and a mallet to compress the mixture to tablets. Packing the tablets airtight is essential, otherwise the fat will go rancid. To cook, simply crumble into COLD water and heat to a boil. Keep it boiling for 5 minutes and you're done.
Hey Rolf, thanks a lot for your comment! You're absolutely right, pressing them to tablets is much better. I don't have a press, this is why I used water. I really like your idea with the PVC tube and the mallet. Maybe a wrench could also work. Will definitely try this out, also with adding some shortening to it. @@BushcraftBuddy You're most welcome. I also tried this with red lentils, which worked very well. I also just recently found a very similar product from Ukrainia if I remember it right. I found it in a russian supermarket here in Berlin. The peas are only partly broken and it comes in a square block, undivided and for 1,7 liters of water. The spicing is a little different and the finished product is somewhat 'chunkier', but the preparation is the same.
Next time I visit this supermarket again, I will definitely stock up on this product.

Most of those soup mixes or bouillon's are full of salt and you don't want salt because salt attracts water and you don't want your ever words to spoil which it will eventually when it gets too moist or damp because of where you might be that's why none of the original recipes even for heart attack had really water in it but they did have quite a bit of lard... Varying types.
Any advice for someone whos oven doesnt go below 300 Fahrenheit?
You can also use lard instead of water and simply press them. This is even closer to the original.
How do you get bacon outside of the UK?
Here in Switzerland Bacon used to be called 'Speck-Tranchen', but the other day I saw it labeled 'Bacon' in a local Supermarkt.
My guess is the recipe would also work fine with ham, or even beef jerky!

How long is this likely to stay good for if you don't refridgerate?
This is hard to answer since I haven't stored them for long, yet. The sterilisation step should kill all germs and make sure the foil is clean. My gut feeling says that you can store them for several years. Hope this helps.
If you manage to keep it dry by properly sealing and then heating it certainly a few years if it isn't airtight a few months tops

I ground 10 tablespoons of peas in a blender and came up with something shy of 3/4 cup of pea flour (or meal, if that's the case). I like my pea soup a little more like a puree or chowder than a broth, so I added some pea flour to bring it to roughly a cup of pea...stuff. I'll dry it like that and post my results.

Do you have any directions with a gas oven?
I haven't tried it but you should probably use the lowest possible setting for the drying process. You can check if the tablets are dry with your fingers from time to time. I hope this helps, sorry I do not own a gas oven and cannot try it out myself. Cheers, Martin 🤜🏼🤛🏼🤠

we have a home in a very remote area with a community that is interested in a group make of erbswurst as a survival food to equip our atv's and vehicles with....will report results, here.

Hi Hogan, by heating the tablets over 120⁰C you kill all bacteria, fungi and viruses, thus sterilizing the food. So bacteria will not grow. It is not a specific function of the oven. Best, Martin
