FINALLY, a freshly-ground Spelt recipe that works! Thank you for making and posting this. I have a MockMill 100 and a KitchenAid mixer and erred on the side of one rise instead of two, and the breads still came out fine. I did one variation, instead of two loaves I did one loaf and three 11 inch sub rolls. The rolls popped out of the silicone roll pan easily. I'm in good shape for lunch this week!

Ran across your channel and I love your recipes. I want to try spelt bread, cream of wheat, apple Cinn cake, and crockpot chili right away. I also loved when u forgot to put the topping on the cake!! You can copy and paste into a document to print. It is my hope in the future to have a website, but I also work full time and it would take a whole lot of manpower to do so. I grease my bread Pan with lard that might stop them from sticking to the Pan just an idea, LOL. And they look delicious. I will have to try That recipe

I used to make 100% spelt bread, cookies, muffins, etc! Now I have 25lb. Spelt grain, but shopping for a better mill. Using a KitchenAid attachment mill now.

Tala Siliconised loaf liners work great for bread. No more greasing pans. Fold up and store in freezer between uses. Can be reused quite a few times. A pack of 40 lasts a long time. Highly recommend, especially for sticky doughs.
Interesting. i figured out what happened. I use Kirkland butter and they have added more water to the butter so that my baked good are not turning out the same - and things are sticking. I will look into the loaf liners- thank you!
Well, I picked your video for my first homemade bread adventure. I messed up the process by buying the wrong kind of yeast. The packets stated that they were for making pizza dough and were not suitable for bread making lol. Then I forgot to add the oil and honey until after the first rising, lol again! After adding the two missing ingredients and kneading the crap out of it and having to add about a cup of extra white bread flour, because I was out of spelt flour, I put it in bread pans for the second rise. That went well and after baking, I was astonished to discover that they came out a nice golden brown and very tasty. I am looking forward to my next try at this recipe to see how it turns out by doing it right lol. Thanks for the excellent instructions, even though I totally screwed up the process! I guess your recipe is fool proof lol! BTY, I like the old school "In the kitchen with Dinah" theme of your channel. Fie fi fiddly I o! I'm a big fan of Nat King Cole.

I have a Nutrimill Classic. I bought it at a local kitchen shop many years ago. You can get them on Amazon or at Nutrimill.com. I don't have an affiliate link yet, but the price is kinda the same. They do run an occasional special. Nutrimill did just come out with a new/less expensive model the Impact Grain Mill - its about $100 less.

I don't autolyse. I never have. I've milled flour for almost 20 years and have always had great success doing it this way, so that's what I do. My loaves are fluffy and delicious.

You can find the recipe in the description. I think the easiest way to print the recipe would be to copy it from the description and paste it into a Notepad or TextEdit file and print from there. Sometimes in the past I have used a website called printfriendly.com that has a browser extension for printing web pages. It normally works very well but not so much on UA-cam since UA-cam has so many different text areas and comments and suggested videos, etc.
I do not. There is so much nutrition in the bran and germ, I want to eat all those health benefits. The only time I might sift would be for a white cake from soft white wheat berries - and that would be more for looks and texture.

Ancient grains tend to run on the sticky side. Its just something you have to get used to. I haven't found that autolysing helps. Thanks for the suggestion.
soft white wheat is perfect. Soft white wheat is what is commercially made into all-purpose flour. If you want you could always add a little hard white wheat to the mix.

I was taught to autolyze before adding yeast to softened the bran. After 20 min. Then add yeast and mix.

I make spelt bread and I always use parchment paper in the pan so the bread doesn’t stick.

Poor hubby the dog got some and you as well but hubby didn't get any tasting of bread.
