Erfan Mirzaii ق is q in English. its my dialect don't teach me Urdu is my second language so I know no exact word for ق exists but q is closer than gh so don't be teaching me.

Erfan Mirzaii no we say qourma not qorme like gourmet so I wouldn't know. Guess Urdu and farsi pronunciations really are different like how he says salaamti, darya, nauroze and other stuff we pronounce it way different so I don't whether its a special dialect or what but I am writing from Quetta near the Irani border for reference. So I guess for the same dish we have different ways of saying it. Urdu is also influenced from hindi, Turkish, English and Arabic among others so that might factor into the difference of pronunciation but my teacher was a kurd from Iran and he never pronounced things differently although to be fair he was my English teacher so not much Urdu being spoken. Well for me its qourma and for you its ghorme. we say it by emphasizing the throat and with an aaa sound not ae sound
I absolutely love love LOVE middle eastern food, they're hard to describe, its delectable and yet so very satisfying. Nothing like it. And the variety is amazing! I need to get better acquainted with Persian food now!

Next time you're here, stop over and I'll make you whatever Persian dish you're craving!!! So many people have no idea what great tasting food is from Iran (Persian). Sharokh introduced it to me 49+ years ago and it's my absolute favorite! Come back soon to Raleigh, Maz! Thank god we get our Maz fiz thru the videos until you're back!

Well iranian cuisine may be similiar only to north indian cuisine but it is completly different than south indian food like tamil food for exemple ( i am tamil ) when we eat in a banana leaf ( banana leaf curry is also served in many south indian state ). Anyway very nice video about iranian food

I've never found Persian food restaurant... I wanna try it but it's difficult,,,

Iranian food is like Turkish food but supremely better, or like Greek food but immensely more refined. It's aromatic as opposed to spicey depending on region. There are subtleties of 'warm' and 'cold', fruits, molasses, herbs, milk, yoghurt, whey, bread, nuts, sweet and savoury tones throughout. The cuisine is a treat for the eyes, nourishment for the soul, worthy food for emperors, kings and peasants alike. The Arabs wished they could have it, the Turks hoped to replicate it, the Indians were and are defined by it and the Aussies even claim a wine from it. Some Iranian dishes are claimed as national dishes of other countries but their origin is Iranian. As the Persians taught the world human rights, algebra, backgammon, water irrigation, a postal service, refrigeration, amongst many other things, they made sure they left behind a culinary legacy that is as delicate as a flower yet as hearty as a buck, smooth as silk and as elegant as a swan. I've travelled the world, been to many places and eaten many varieties of food but in my humble opinion, nothing even comes close to Persian food.

I love both Indian and Persian food. However, regarding your comparison , I’d have to disagree with you. For the most part, they are drastically different. Indian cuisine being heavily spicier and much more complex in its vegetarian options. One link of Persian influence you could see would be the introduction of saffron, (an Iranian spice) much later in Indian cuisine ; but this spice has spread to other cultures such as Spain , Italy , Greece and even America. Maybe rice too, but so many cultures use rice...even though I gotta say India grows it the best :p. Nevertheless, India has 1000s of years of history so that comparison would undermine the native cuisine that has been brewing there. Iran’s cuisine is comparable to that of Greece , the Balkans and , the caucuses and Turkish cultures. This is not a surprise being some of these cultures grew out of each other (Iran and the caucuses for sure) and around each other for thousands of years. I’d say it’s a lot of lamb and meats with savory and aromatic spices combined with fruits , nuts and olive oil in various fashions lol

Hmmm, I guess we Egyptians took the grilled platter from you guys then, we have this dish too. The rice; we know it's from Bishawar or it's Biriani or Basmati but we eat it in Egypt. However, the thing that was new to me is the squares of cooked rice and the toppings, man they look amazing, gotta know how they're made. Lovely as always Maz!
