Italian here, just my two cents about the video's topic. Italian gelato it's not too sweet like the american Ice Cream and it doesn't have too vivid colors because we don't use artificial dyes. After I saw your video if I had to judge a good italian gelato by its appearance I would immediately say that the best is the Venchi's and the worst the Gazzelle's one, a gelato that is too cold to the point of appearing frozen is considered low quality in Italy, because excessive cold dampens the flavors and changes the texture on the palate, a good ice cream must be smooty creamy. As far as conservation is concerned, Pavè's method inside a closed container is in theory the best because it is the method that exposes the gelato least to the air, but this is a problem only when the gelato remains exposed for too long. In the best Gelaterie the containers of gelato on display are quickly emptied, and this, together with the queue of people outside, is one of the signs that lets you understand if an gelato shop sells good gelato. P.S. the last episode was very fun, I follow you from some time because I really like your taiwanese accent when you speak Mandarin.
