  • Fermenting beer in kegs brings many advantages. For starters - they’re stainless steel and easy to sanitize. They fit in your keezer for temp control. They’re pressure rated so you can ferment under pressure, easily purged of oxygen, and you can perform closed transfers. And you can ferment and serve in the same vessel.
    But the humble corny keg wasn’t designed for any of this. It’s a serving vessel. You run the risk of blocked dip tubes, and questionable spunding practices.
    So I’m attempting to assemble the ultimate fermentation keg. I’m using the prototype Clawhammer keg and customizing it with a pretty cool temperature control addition. Then I’m going to add some wort and see how it does. Will my franken-keg live up to expectations?

    I love the homebrewer's mindset of experimenting and trying new things, but there comes a point where the cost of this keg + accessories you could buy a unitank with less clutter.

    Are you overthinking the blockage issue, most kegs are rated around 130psi, that's quite a lot of pressure to force through whatever moist stuff you've got hanging around in your tubing/PRV.

    I love this for so many reasons... it just goes to show the ingenuity of home brewers (and the folks that make gear for them) and because it's like a Rube Goldberg experiment for kegging.

    Fermenting in a corny is (as Marshall would say) super rad. Sacrificing a few litres of beer is totally worth it for the convenience - cold crashing with zero suck back - yes please.
    Oh! Take it from someone who knows: the tiny loop of steel that connects the ball to the filter on the dip tube is extremely easy to break off. Totally knackered.

      i find you can use pliers and bend and close the steel loop once it breaks.

      @@Jcbrovz Yep that would work. Unfortunately, in my case, the whole loop came away from the ball. It broke off at the point the loop is welded/soldered to the ball itself. 👍

    It’s cool and looks awesome! I do have to wonder about the price, clawhammer makes great stuff but they make expensive stuff. I understand cost is relative and certainly spend whatever you can afford or want to. My guess is the entire set up shown will be in uni-tank territory in which case why not just get a uni-tank.
    I am from the old school of home brewers and we were/are all about the diy (for example my electric rig is very “similar” to the clawhammer 240 but it costs a couple hundred bucks to make) I have to say I am not suggesting anyone not buy it if you want it I just personally like building stuff. I got if topic but I really need to see what the retail cost of that keg fermenter is before I make a judgement. It looks great but good looks often lead to diminished returns.

    Nice to see you on brulosophy! I think a shorter tee connection would help the coolstix reach cold crash temps. These fermenters looks awesome, thank you for the video!

    I did some lookups and measuring, and 2 of these would fit quite nicely into a RAPT fermentation chamber as well, for those of you that like to ferment 10 gallon batches, don't like glycol, and are done with plastic fermenters or DIY'ing mini-fridges and with heating and cooling setups. Excessive but nice in the sense that it's turnkey and has a lot of valve fittings and internet connectivity options already there. I'm going to wait a bit and see how the iteration/improvement loops go with Clawhammer's offering, but I'm pretty excited about this as an alternative to the Spike CF10 if I want to split batches and try dueling yeast recipes.

    usually in a glycol chiller the glycol temp should be between -4C (25F) and -8C (17) but is important what the manufacturer recommend.

    I have a CoolStix as well that's now collecting dust. It's ok for fermentation temps but there's just not enough surface area to be able to cold crash. I got one as a gift and tested it in my Spike fermenter and when it came time to cold crash it took over 18 hours to go from 68° to 44° - then it just quit and wouldn't go any lower. In contrast, my glycol coil can go from 68° to 38° in about 3 hours. It would be cool if they could develop a mini coil that fits through a 1.5" TC, much the same way that a regular coil fits through a 4" opening.

    Have done a lot of fermentation in kegs over the years and have had good experiences, I stopped when I wanted temp control and picked up a unitank. I think this is close to perfect though I wish someone would cook up a keg with a jacket for glycol then you would have a port for hop drop and spunding! Maybe as you are in the US you could try a cool zone wrap or similar.

    Interesting seeing development of the corny keg format. I expect this setup to cost a bit more than the reasonably affordable second hand corny kegs. With that new price point, what's the benefit using the claw hammer setup vs. a unitank from any other brand?
    Seems like the biggest drawback is still it's size.
    A lid that fits the regular kegs but with a TC-connection would be cool. Might already be such a product out there?
    For transparency, I've been fermenting in kegs for almost a year now and I love it. I use the Speidel Braumeister 10L so size isn't a concern.

      The clawhammer will be $800 less than any comparable unitank on the market, including the accessories.

    I use a Sanke with Commercial keg adapter for fermentation and floating dip tube. I use heat but ferment in cool place. I use a kegland spunding valve also. 30L kegs work great for 23L brews and a 58L for 46L brews. Pressure closed transfer when done! I really like the safety improvements in the claw hammer prototype!

      What floating dip tube did you get? I haven’t found one that will fit through the opening in a sanke.

      @@nathanphillips5156 I purchased the kegland ones in the psi kit. 1 30l worked but the second I had to take a die grinder to the lip inside the keg to make it work.

    I also noticed my coolstix didn't cold crash, they work for lagering pretty well though if placed in a temp controlled and moderate climate area.

    Love brulosophy and always have an eye out for new content from Martin's. The production value on this one is spot on and what I've come to expect. I also have a huge amount of respect in Martin's opinion. That being said, i was never quite sure if this was supposed to be an informative video, product review, or a straight up advertisement. I would love to see the brulosophy approach to transparency and impartiality applied to videos like this with more vigour.

      I completely agree, is this where the “show” is going? Should Clawhammer produced and posted this video on THEIR website? All the years I have read Brulosoohy, I don’t recall seeing articles with product how to or enhancement videos. Disappointed with this episode…one more thing - the cost for a setup like Martin is well over $1200 bucks……not sure of the exact price but this is not typical of any homebrewer I know of.

    Brulosophy and THC (hehe) have been two of my most dependable sources of information since I started brewing. I’ve lost count of the times I’ve been down the wormhole of a particular brew or style and been able to find really good, useable info online through Brulosophy exbeeriments or watching Martin brew that particular style.
    So thanks heaps to Martin and Brulosophy for all of your help and information over the years. I’m sure I’m not alone and I hope you guys realise just how much of a service you provide to the home brew community, even here in Australia!

    When you first showed the cooling stick, I wondered if it would have enough surface area to efficiently cool the keg. A coil would be much more effective, but then again, that would take up extra space in the fermenter, where space is at a premium.

    I really love the claw-hammer fermenter + all the add ons and this video was really fun to watch/ get my head around the possibilities. My only question, is using a standard corny actually a real danger? Until now I've never heard anyone talk about pressure releases becoming blocked.

    geez. way too much bling. nothing wrong with a corny, kind of pointless knocking something that costs $50-80 AUD with a $12 floating dip tube and $6 gas post swap on the liquid post. $30 spunding valve and $4 10psi PRV.
    130 psi rated vessel.. That Clawhammer would fit in a chest freezer... wouldnt fit in a kegerator, only an upfright freezer or fridge. pass..
    cheep and cheerful doesnt need another $800 thrown at it.
