Consumme is condensed broth until it's more sticky and not watery. Say a quart of broth boiled and reduced down to half a cup. It just makes the flavor beefier. 😊

I lost my Mom in 2005 and there are times I still cry over missing her. It is a work in process and one that leaves a big permanent scar on the heart.

Most of my family doesn’t like mushrooms. I love them. So what I do is dehydrated sliced white mushrooms. Then I blend them up and put that in my stroganoff. I out the mushroom powder in everything. It gives an umami flavor to everything. It’s so nice seeing you post videos on your channel again.
With that freeze dryer it would be perfect to freeze dry mushrooms and simply add a few to the bowl of who liked them! They would reconstitute in no time in the gravy/sauce!
This looks like a great dinner. Burgundy is a region in France where wine comes from. If it is a red wine usually it is pinot noir so buying or using a pinot noir wine would work as a good burgundy. Consommé is a clarified clear soup made from both or stock. It uses egg whites to remove sediment and fat from the stock basically very filtered beef broth.
My mom made beef stroganoff and now I make it. I use a good steak or two and slice it up. I add some Dijon mustard and a dash or two of w sauce, plus your ingredients. ( I use button mushrooms as I love mushrooms) . Your stroganoff looked amazing! I’m gonna have to try your recipe.

Its usually a very intense beef taste and used to be dilute with liquid, be it from vegetables or water when in pot. Usually is someone writes consomme... the intent was to used can consomme like campbells.

Mushrooms give a lot of deep flavor that makes dishes more rich and complex. If its about the consistency you may want to try mushroom powder. Or eat it however you all like it. Ijust thought, that it is often more a problem with their texture than their flavor. 😅
Beef Stroganoff was always my favorite meal growing up. I never got the recipe from my mom because most of my adult life I was vegetarian. Now I’m eating meat again, but my mom passed away this past year and now I can never ask her how she made it. Thank you for sharing your family recipe. It means a lot to me.

Just from the sound of the recipe and the way it looked when it was cooked I will probably add it to my family recipe list! I am not fond of mushrooms either. It’s a texture thing with me. Feels like I am chewing something “tough”. Now I use mushroom powder. Gives me the flavor of mushrooms, without the texture “problem”. I will also use the powder when making my own pasta.
I take my grandkids to their stuff like swimming or violin or soccar and that day I need to have food for them. It is hard thinking up stuff that is healthy and that kids like to eat.

Oh, goodness, imagine my surprise to get a notification from this account. I thought it was dead, but stayed subscribed just in case. I truly hope you do more recipes. I have been wanting you to do some of the gluten free stuff you do on Justin's channel so much. This looks scrumptious. I am allergic to mushroom, so would have to leave them out anyway. I think Jovial is the best gluten free pasta noodle, too, for all the heavy duty noodles. Not a fan of the spaghetti and elbow macaroni, though. Those mush up too fast, and you can't make them successfully in the Instant Pot. Fortunately, they have a lot of different heavy duty noodles that you can. I got a pasta maker for Christmas so I am going to try my hand at making my own gluten free spaghetti and elbow macaroni noodles and see if I can't solve that problem. I was sad when Jovial discontinued their gluten free baking mix and pancake mix in favor of their Einkorn flour stuff, which my daughter still can't eat. Ancient wheat or not, it is still wheat.

I use the red wine for Beef vegs. soup or for beef gravy also thicken it up letting it burn off the other things !!! Do you sell the big cast iron pot there I really like that !!! Unfortunately, they have high potassium content for those on a renal diet. (Diet for those in kidney failure.

It’s the same cutting broccoli and cauliflower. I don’t remember why but cut it, let it sit a bit then cook or eat. 🤷♀️
