I am a Manhattan Bagel Franchisee and want to give a little inside info to help clear up some of what the teacher brought up. Our brand company owns alot of brands but we are a franchise business model meaning each store is owned and operated by someone we are mom and pop locations operating under a name brand. We follow brand standards but at the end of the day each store is uniquely run to some extent. Our bagel dough formula is different from Panera and the other brands under the parent company. All we get from the company is the raw dough for consistency but each store proofs ,kettle boils and bakes their bagels individually. Also our brand was bought by paneras parent company over 10 years ago and thankfully has done little to change the core of what makes us who we are. A little background from me is my location has been in my family as a Manhattan bagel location for well over 20 years.
