I was big user of non stick vessels but switched to cast iron 3 yrs ago. It's best to use cast iron as it dsnt stain, dsnt break into layers n with each use it turns into non stick naturally. It's very easy to use as u can use metal spatulas or forks (no danger of scratching the surface) n after the cast iron is seasoned with use, it turns non stick. The heat diffusion is so wonderful that I often leave sabji cooking in my cast iron kadhai in low heat n go for a bath. I return to find the sabji perfectly cooked, no need to keep stirring it. Dosas also turn crispier on cast iron as compared to all other metals. I also have iron kadhais, but cast iron gives best heat diffusion evenly all over n prevents food at the bottom from burning.
No food doesn't become black. Once cooked in cast iron vessels it's alway better to transfer food to stainless steel vessels. Even sour foods can be cooked but immediately transfer to stainless steel vessels. Do not leave cooked food in cast iron vessels 🙏🏼

Yes, Vinod Stainless steel products are excellent. I have been using the saucepan n kadai for last 28 years. Though expensive it is worth buying. One time investment.
I highly recommends Hawkins stainlesssteel cookware, I've prestige stainlesssteel cookware too but Hawkins ones are better. Always go for branded utensils.

Helpful and informative video. If you have cast iron and iron cookware please make a video on maintenance and tips to cook. I have used different iron tavas but none of them worked for me As either roti burns or remain uncooked. Can you please show which type of tava you use?

One more tip for jala huwa khana aur bottom of kadai getting black after using a lot, use pitambari what we use to clean copper and brass utensils easy to clean, and gives shine to utensils then u can wash with regular dishwashing liquids

I have vinod triply kadhais but still food gets burnt if u don't continuously stir it , i guess this is there in all steel vessels irrespective of the high and expensive brands we use , this is my experience Ma'am😊
Keep the kadai on flame till it gets smokey hot then put oil in it. this way food will not get burnt Because it will create a non stick layer on kadahi. I am also using this triply kadai and food does not get burnt. U can watch videos on youtube how to make steel utensil non stick.

I just use traditional iron cookwares. Once seasoned properly they behave like nonstick. Requires very less maintenance and has high durability. Fancy equipments are good for convinience but very short lived. Utensils are just tools. No matter what utensils you used, the cooking skills decide the end result.

In deep fry kadhaai, a yellow oil layer forms on the top. It is like oil spray as the oil while frying keeps on settling on the top empty portion of the inside of the vessel. It is very difficult to wash it after the kadhai cools down bcoz once the oil layer cools down, it becomes hard. For that I immediately remove the fried oil in a glass bowl and soak the kadhai in soap water every single time I deep fry something. If you have any other easier way, please make a video on this oil removing on kadhais inside n outside that form over the years..

I too have a SS kadhai which is not a triply one. This was bought almost 5 yrs back. When I observed food sticking to the bottom I started placing a tava underneath and then continued cooking. Can't dispose or simply give away such items. Jugaad karna padta hain.
Use heavy iron kadhai with thick sheet material. We have different sizes of iron kadhai at home to suit the needs. Food doesn't stick and doesn't require too much oil while cooking. Iron tawa has become so nonstick that once you lightly polish it with oil, it can churn out 5-6 dosas easily without sticking at all.

Candles generally are not good..they are made of different sort of wax which create pollution inside.. it is always better to light diyas with Sesame oil or any other oil..preferable natural oil..there would be a marked difference in the aura of your home. hope it helps..

Try pitambari power. No need to soak just wet the utensils and rub the powder with wet hands. And it's really easy like a child's work.

Start from high to low flame.And make sure to season it before making anything...

I just use traditional iron cookwares. Once seasoned properly they behave like nonstick. Requires very less maintenance and has high durability. Fancy equipments are good for convinience but very short lived.
Utensils are just tools. No matter what utensils you used, the cooking skills decide the end result.

In deep fry kadhaai, a yellow oil layer forms on the top. It is like oil spray as the oil while frying keeps on settling on the top empty portion of the inside of the vessel.
It is very difficult to wash it after the kadhai cools down bcoz once the oil layer cools down, it becomes hard. For that I immediately remove the fried oil in a glass bowl and soak the kadhai in soap water every single time I deep fry something.
If you have any other easier way, please make a video on this oil removing on kadhais inside n outside that form over the years..
One small suggestion,if possible can u put ur all recipes in one r two videos,it will be easy for us to see n prepare.tq

I too have a SS kadhai which is not a triply one. This was bought almost 5 yrs back. When I observed food sticking to the bottom I started placing a tava underneath and then continued cooking.
Can't dispose or simply give away such items.
Jugaad karna padta hain.
Use heavy iron kadhai with thick sheet material. We have different sizes of iron kadhai at home to suit the needs. Food doesn't stick and doesn't require too much oil while cooking.
Iron tawa has become so nonstick that once you lightly polish it with oil, it can churn out 5-6 dosas easily without sticking at all.

मेरी एक स्टील की कढ़ाई बुरी तरह जल गई थी क्योंकि मैं भूल गई थी गॅस पर रख कर.. जिसे साफ़ करने के लिए मैंने acid use किया. साफ़ तो अच्छे से हो गई पर acid कुछ ज्यादा देर रह गया मैं फिर से भूल गई थी 😞 जिससे कि अब वो kadhai चमक नहीं रही है. Polish चला गया है .. क्या वो safe to use है? या कुछ ऐसी idea जिससे चमक फिर से आ जाए वो नॉर्मल पहले जैसी दिखे?

Candles generally are not good..they are made of different sort of wax which create pollution inside.. it is always better to light diyas with Sesame oil or any other oil..preferable natural oil..there would be a marked difference in the aura of your home. hope it helps..
