I lived in Burlingame CA where Guittard chocate is manufactured. When they are cooking it is an amazing aroma.
I’m in SF. What time do they cook? I would love to drive by one time and smell this amazingness🤤🤤
Not sure. They are in north Burlingame. You can drive down El Camino and you can't miss the aroma. It was just a part of living in Burlingame. They sell tanks of chocolate to See's.

I love using Guittard semisweet chips when making chocolate ganache!
I've gone on a tour there twice with a baking class group. Got a variety of goodies on the way out.
Gotta go with dark or semi sweet for chocolate chip cookies. The cookie has plenty of sugar already, so you need that bitterness for balance and maximum chocolate flavor.

She picked my favorite milk chocolate chip! I’ve bought lots of different brands during quarantine (nestles, ghiradelli, Hershey, Whole Foods) and guittard was my favorite by far. OTOH, I don’t put them in cookies...
i always use guittard. i like the bigger chip.
I’m with Bridget on this, I prefer a little inconsistency in each bite.
Correct; that way you get to taste the actual cookie; with a chocolate bite, it’s a very different experience.

If the cookie itself is delicious and magical, I love the nuance the larger chips bring.
I use chips and pecans, so the larger chip could be fun. But Hershey is more readily available (and almost prohibitively expensive - imports!) 😎

I mix the semisweet CHUNKS, with CHIPS in a half and half of milk and bitter sweet. its amazing.
Bag of larger chips. Plus a regular sized chips. Not a problem.

Her comment at the end about mixing the milk chocolate with the semisweet chocolate and then other kinds of chocolate as well… that’s basically the ATK recipe for triple chocolate cookies, which have been a hit for my chocoholic family and a conversation starter at potlucks.
Definitely prefer Guittard. Way better than that other chocolate company from San Francisco imo.
I use a cup of bittersweet which are smaller chips in the brand I use and a cup of milk which are a bigger chip per batch.
I use the Ghirardelli to make fudge and people always love it and are surprised I used milk chocolate.
Nestle Toll House. I was a 24yr old stay at home mom with three little ones and bought the bag and other ingredients. Not knowing any better I used imitation vanilla but they were still delicious. I mixed it all by hand with a wooden spoon in a big bowl. My mom who didn’t bake thought I was a genius. 😆 After that I baked all our Christmas cookies. Forty years later I’ll stick to Nestle for the memories.
If I'm using bigger chocolate chips in a chocolate chip cookie I just add a little more than the recipe calls for and sometimes they'll even press some extra chips into the top of the cookie before it's baked

The dark chocolate for the win for me. I eat that same dark chip like candy everyday. Keep a couple of the big bags in the freezer all the time.

@@jspicecue1463 dark chocolate is very good for you. I think it has the highest antioxidants by weight of any food from what I saw. I’m 59 and everyone thinks I’m around 40. I was pulled in front of a class by a law enforcement teacher as a demonstration not to judge people by looks. He knew my age and had the whole class try to guess my age. They were all way off. A bunch of my friends thought they were older than me and shocked when they found out I’m much older than them. Don’t know if it’s my chocolate diet or genetics. I eat a lot of fish I catch also. Had fish the last 3 days. Asians eat a lot of fish also and some live very long lives.
@@jspicecue1463 I'm with James. I eat those Ghiradelli and Guittard (60% and 63%) chocolate chips like candy. Unlike him, I am actually 40 but I might as well be 25 if you compare my physical condition to the vast majority of Americans.
I agree with Bridget. A mix of big and little chips.
Used to buy the Guittard milk chocolate chips in bulk when ordering from Blooming Prairie warehouse with a buying club years ago. I would stick 2 or 3 in the center of our banana muffins. (But too easy to stick in my mouth as they were so perfect and irresistible.) They are excellent but really hard to find where I live.

A few years ago I used to be loyal to Ghiradelli 60% chocolate chips until one day I noticed they tasted burnt. I thought it was a bad batch of chocolate chips, but no, I purchased a further two bags and they still tasted burnt. Either the manufacturing process changed or my sense of taste and smell changed! After that I stopped buying it, and now I no longer have brand loyalty. Currently I’m enjoying Aldi ‘Specially Selected Belgian’ semi-sweet and dark chocolate chunks. They are so good I eat them straight from the bag.
I use the Tollhouse recipe, but usually Hershey chips 😎
I recently switched to Kirkland chips from Costco… wondering how they’d rate, we love them.
I think I need to test this myself. Maybe twice. Maybe three times. Don't wanna rush into a judgement.
Guittard is very good eating chocolate. That's good to put in gorp. But I think for chocolate chip cookies it needs to be semi-sweet or dark chocolate.
Milk chocolate is nice when you have a saltier cookie. It also doesn't overpower subtler spices, nuts and fruits like dark chocolate can.

I got the subscription and the Ghirardelli is third, above the Toll House. All of them were in the “Recommended” category and there weren’t any “Not Recommended” pile so they all scored pretty closely and are all very good in their own way.

Agree all those brands are winners , love the Milk chocolate but the semi sweet is also good
I used to bring my lunch to the office. My boss who was also a judge determined my diet was toxic. One of my favorite desserts was a 1/2 cup of Nestle semisweet chocolat morsels.

He said so himself, weights weren’t the same when using cup measurements. Just use a scale to even out the playing field, this felt more like a comparison of chocolate chip shape than the brand itself.

I haven't been able to eat chocolate in 22 years due to GERD. Luckily my kids don't share the gene. It would be great to see an episode of ATK about what *might* be better than chocolate.

Would love to see a video from you guys about how best to cook different popular veggie burger brands. Impossible and Beyond have become pretty mainstream, but I still find that even nice restaurants overcook them. My meat-loving dad has taken this up as a challenge, and proudly presents me with a perfect Beyond burger any time I visit for a cookout now. These things can taste good when they aren’t burnt to the texture of a hockey puck.

True! I have found I don't love those to snack on plain because it's just a little too dark for my maximum enjoyment. But in cookies? Perfect.

I was loyal to Ghirardelli chips until I tried the Target brand (Good and Gather.) The milk chocolate & white chips taste the same! Or at least close enough! And cheaper of course. Good enough for me to switch.
All sound good, but I still prefer my Mom's recipe using Hersey's semi-sweet chocolate chips. & no, it isn't the recipe on the bag.

Costco's Kirkland brand is really good, they have 51% cacao. I've tried all the ones they tested and Costco brand is better
Good that Nestle didn't win besides nostalgia -- Such a shameful company. We've had great results with Ghirardelli for a few years. Great for a cookies and handfuls for a snack -- good quality powders too.

@@Taksamajoah well I said shameful. Nestle has a very long history of ethical issues and environmental issues. Most big companies are bad in some way, that's the nature of things; like Nike or Coca-Cola. But Nestle is a real stinker. I'm not going to type a huge essay in the UA-cam comments, but if you Google "Nestle ethical issues" you'll see lists of concerns.
Very funny when she says "there's no flour, just all chocolate chips". Chocolate Chip cookies are my most favorite. We make the Jacques Torres recipe...the very best of the best, using the Ghirardelli 60%. Nice, sweet review.👍👍

I'm sorry but Hershey's isn't good chocolate, it tastes off. I haven't tasted their chips, but I doubt they'd improve the chocolate for chips. Just because people in the US are used to weird tasting milk chocolate doesn't mean we should keep buying it!
Those cookies look tough, based on watching her breaking them. I know they aren't supposed to be gooey, but they almost snapped when broken which I don't think that style of cookie should do.

You claim this is a chocolate chip review, when in reality this is a COOKIE review. I've never given an ATK video a thumbs down, but this one earns it.

Disappointed in ATK today. In a tasting with such close margins, shouldn’t the deciding factor be the brand produced most humanely and sustainably? It’s no secret that the vast majority of chocolate is made with environmental devastation at the expense of human lives.
ATK has a responsibility to wield their influence with much better discretion.
I would say No. They are there to give you whats the tastiest.
It's a taste test, not a responsibility test.
