    1 air tight jar for marination
    3 ½ lbs pork shoulder
    4 cups white vinegar
    4 tsp salt
    wiri wiri and/or scoth bonnet peppers
    4 -5 stems fine leaf thyme
    ½ lb garlic ( approx 3 large heads )

    Garlic pork was my husband favorite he was born in Guyana from portuguese parents he will make this every christmas for us, mow my daughter doing it as good as her dad 😍👍

    What... I know garlic pork is famous throughout the Christmas holiday but I am certain that pepper pot is most famous for breakfast on Christmas morning.... especially in Guyana it's pepper pot and bread

    When I was a kid, my grandmother, cook it in my country 🇬🇾🇬🇾🇬🇾🇬🇾 and all so she made peppers pot and all so black cakes and baking lots of things I wanted something those days to come back to me I will never forget Christmas 🎄 it here foraging she was a great grandmother when the holiday season ⛄ come around I always be sat I missed her......

    Eh I bought my 2 lbs of shoulder pork yesterday so I thought I make garlic pork for xmas. Growing up in Guyana I ate it once or twice.i looked at a trini cooking show and I thought I will make it here in Toronto. Your vidio was great except I thought u have to boiled the meat before frying.well merry xmas to all of you in guyana.

    Do you have to use fresh pork or can you use pork that has been frozen?

      Fresh is best but if tou don't have fresh , frozen can definitely work. No problem

      Season greetings, it has to be cooked until the water evaporates and then the pork cooks in the fat.
      It should be tender when done.

      Molly says thanks Jaya, chicken, turkey and veal are usually substituted for pork, for garlic pork make your pick as to which you think will work best.

      For the two days to marinate keep it out of the fridge.
      After the 2 days and it has been made in the fridge.

      Yes you can, most people leave it for 4 to 7 days.

    I have been making this every year for Christmas. I find it last along time I put in dark cupboard. I have made it a month ahead for Christmas sometimes longer or I will keep in fridge.

    Is the meat supposed to taste very vinegary when it’s finished I made this dish today and it came out nice but I wasn’t sure if it was supposed to taste so vinegary

      Sure, it's probably in the comments somewhere already. It's because the fact that the pork will not be cooked, such precautions are necessary to prevent spoiling, which can happen with minimal contamination due to the fact that it will not be exposed to heat( cooking).

      Thanks, because any little bacteria will cause the pork to go bad, taking into consideration that it is not being cooked immediately or refrigerated. It is also advised to sterilize all utensils which the pork will be in contact with in the process ( leaving them in hot water for a bit ).

    Why you don't tell people to list of garlic and what is it that you are soaking just briefly Lee you dipping the pork into what order or white vinegar you need to be more specific

      I explained every step, I said because the pork will not be cooked, it should not be handled with your fingers AFTER rinsing with the vinegar to avoid contamination. Obviously it is a separate bit of vinegar used to rinse it ( the same kind listed in the ingredients list )
      if it was a different kind of vinegar I would have mentioned that, but I did not, so that means it is the same kind of vinegar.
