I made this recipe and it was soo delicious!! Definitely going to be a staple in my cookbook. Thank you so much Mel. I typed out the ingredients and instructions in case it's helpful for anyone who wants to try to make this. :) Ingredients • 5 dried shiitake mushrooms • 1/2 lb pork belly • 1 to 1.5 lbs ground pork • 3 Large eggs • 4 Garlic cloves • 1 onion • 3 tbsps Soy sauce • 2 tbsps Dark soy sauce • 1/4 cup Cooking wine (e.g. shaoxing brand) • 1 tsp Chinese 5 spice powder • 2 1/2 tsps sugar • 4 Star-Anises • Olive oil to coat pan • Green onion for garnish • Taiwan plain noodles Instructions 1. Soak dried shiitake mushroom in water - need to get plump so it can be diced. 2. Boil 3 large eggs. 3. Chop onions into small pieces and dice 4 garlics. 4. Drain shiitake mushrooms and squeeze water out. Then dice into small pieces. 5. Slice pork belly into small pieces. 6. Place medium or large-sized saute pan on medium heat. First, coat bottom of pan with olive oil. Then add onion and saute for about 2 minutes. Then add garlic, shiitake mushroom, 2.5 tsp of sugar, 1 tsp chinese 5-spice powder, 4 star-anise, 1 lb ground pork and 1/2 lb pork belly. Try to break up the ground pork. Cook for 5 minutes to brown the meat. 7. After 5 minutes, add 1/4 cup of cooking wine and 2 tbsps of dark soy sauce and 3 tbsps of regular soy sauce. 8. Peel eggs and add the whole eggs to pan. Add enough water to cover the tip of the meat (enough to bury the meat). 9. Let dish simmer for 1-2 hours on low heat with lid covering pot. 10. You can add more sugar or soy sauce depending on your taste. 11. Cook noodles for 3 minutes so they are perfectly al dente. 12. Top meat on noodle and garnish with green onion and half an egg.

Please get a wooden or plastic cutting board! Got nightmares from using glass ones at this place I used to live. It's way harder to cut on glass and I bet it really dulls the knife.
