From there I have continued to live and eat the Mediterranean way as much as possible. It has changed my life. I went for my annual checkup recently and my bloodwork really improved. Fasting blood sugar was 129, now not fasting 87. I don't remember the numbers, but she said my triglycerides went down over 100 points. I have also lost 60 pounds. I feel great about myself. Making those delicious horta potatoes with the chard tonight to go along with marinated Mediterranean baked chicken. But I did make your Crock-Pot chicken and it was absolutely delicious!! Unfortunately I only had pino't white wine and lemons. No oranges. But it was wonderful. I will purchased some cabernet sauvignon and oranges so I can make again this week. I have Italian heritage and often wondered why I don't like pasta. I have a lot of cheese, cream, polenta and vegetables in my diet, some beans and fish. Turns out my ancestors are from Turin, very Northern Italians and the food they would have eaten was pretty much my present day diet!
I’m working outside the home for the first time in 10 years, so I need transportable meal prep ideas. I’m also vegan, so most of the Mediterranean recipes work for me with a few minor substitutions.
I was in the same position as you. No time, no brains. KISS... Keep It Simple, Stupid. Here's what worked for me: Just eat the ingredients, not the meal... Watch... You know you need some amount of veggies... ounces, cups.. whatever. Buy veggies, weigh it out and eat it. In a salad. (Spinach is nutrient-dense.) Next, you need protein. Buy a can of tuna, weigh it and eat it. Or cook some meat because you remember how to use your stove. Put that on the side and just eat it. Grains? Have a slice of bread or bowl of pasta or whatever. Fruit? Have some strawberries because they are nutrient-dense, too. Dairy? Glass of milk. Twigs? Nuts, seeds... don't forget the beans. You get the idea... Salads every day because food is fuel, not sex. Just eat something that keeps you alive long enough to do something that you enjoy, like... never mind.
