    Sharing with you today a Bharwa Parwal ki Sabji.
    This stuffed parwal is made without using any onions or garlic. So it also a Jain recipe!
    This Bharwa Parwal ki Sabji gets a unique, taste due to the use of roasted besan in the stuffing. The besan, gram flour, is roasted with spices for a delightful earthy flavor.
    It is then stuffed in emptied pointed gourd that is then fried.
    While many do not enjoy easting Parwal ki Sabji, this stuffed parwal will surely become a favorite for all!

    Recipe :
    Bharwa Parwal ki Sabji
    Preparation Time: 20 minuyes
    Cooking Time: 12-15 minutes
    Serves: 3-4
    Ingredients:
    500 grams Pointed Gourd
    4 tbsp Mustard Oil
    ½ tsp Cumin Seeds
    ¼ tsp pinch Asafoetida
    ½ cup besan
    1/2 tsp kalonji
    2 tbsp fennel powder
    2 tbsp coriander powder
    ½ tsp turmeric powder
    1 tsp red chilli
    1 tsp Cumin Seeds Powder
    2 Green Chilli
    1” Ginger
    2 tsp Dry Mango Powder
    ½ tsp Garam Masala
    Salt to taste
    Method:
    Wash, wipe and scrape the parwal.
    Make a slit in the parwal and scoop out some of the pulp.
    Crush the ginger and green chillies to a coarse paste.
    Heat 2 tbsp oil and bring to a smoke point.
    Cool the oil and add the asafoetida, nigella seeds and the cumin seeds.
    As the cumin crackles, add the besan and roast over low heat till the besan is fragrant and lightly coloured.
    Add the ginger green chilies, salt, all spices and the chopped parwal pulp.
    Sauté for a minute and remove from heat.
    Cool the mixture and stuff the slit parwal with the mixture.
    Heat 2 tbsp oil in a pan and add the stuffed parwal. Fry the parwal from all sides till lightly crisp.
    Cover and cook for a few minutes till the parwal is almost done.
    Sprinkle the remaining stuffing over it. Sprinkle a dash of water, cover andcook for a couple of minutes. Stir well and serve.
