In fact, the priest Félix Kir simply popularised kir. The drink had been known in Dijon for a long time. In 1904, Henri Barabant, the town's mayor, had the town council vote on an important decision! 📜
The decision was as follows: to replace champagne, 🍾 which was too expensive for the town at the time, with bourgogne aligoté, a white wine with a controlled designation of origin, for receptions at the town hall. But finding it too bitter or acidic, he decided to add blackcurrant liqueur in a proportion of one third blackcurrant to two thirds white wine.
Canon Félix Kir, mayor of Dijon from the Liberation in 1945 until his death in 1968, was a great fan of this white wine/cassis blend and kept the tradition alive. Because of his charismatic personality, the drink became associated with his name.
The word "kir" is now a trademark, but is also considered by dictionaries to be a common noun.❣️
