    I notice at the end that instead of playing 0,2,3 on the A string at the very end, you continue to slide along the E string. I don't own the game so I haven't had time to try messing around with this kinda stuff, but does the game still accept playing on a different string as long as it's still the same note?

      You can set the difficulty and speed of any individual part of any song, any arrangement in the Riff repeater, but honestly its worth learning songs at their real difficulty, just slow it down to learn and play rhythm if the solos are out of your skill level.
      Its fun and definitely helps you learn if you're willing to put the hours in though :)
