Nice video! I started my smoking journey with a Oklahoma Joe's Rider DLX it was a very good smoker for a while. I started getting error codes with this and did not want to wait for parts to get it fixed. I saw your video on the PIT BOSS Brunswick and that convinced me to go get that smoker. I have used that smoker a lot with great results. As a matter of fact I am putting on a brisket that has been in brine for 8 days for pastrami this evening on the Brunswick. I have been wanting to jump in the deep end of the smoker pool an get an offset smoker. The Workhourse 1957 is what I was considering but the price has really jumped and I was thinking about the OC G2. For the second time I think I will follow your suggestion.
man I love that the G2 has a collector and main cook chamber length stack, but I hate that they to sacrifice the top door and cowboy grate in the firebox
@@scottjackson6088 I learned on my brother's vertical which was a custom steel one in Texas. I currently am using a pellet smoker vertical by Pit Boss. When I can I shall be getting one such as in Texas in the future.
Chicken thighs on the offset are delicious. I run a light layer of AP seasoning. Then a heavy coat of voodoo. Cooked skin side down 225 for a hour then 325 to finish the skin off. And only bbq sauce on the meat side. Hey grill hey whiskey peach. Give it a try sometime pretty damn good. Nice job on the ribs too looked delicious
Would you recommend a pellet grill as a smoker or is an offset smoker better for smoke? I have a gas grill, so i don't care for a multipurpose device. Im thinking i want a smoker and figured since I'm new should I stick with pellet, but I enjoy a learning curve and if an offset is superior, I wouldnt mind learning

Of course I’m always tempted to go bigger but right now the idea of throwing $3-5k on an offset (not even knowing how to use one) seemed kinda crazy. I’m more than happy I went with the G2. How the have the firebox setup will be an absolute must if I get something bigger down the line. In the meantime, I look forward to all the bbq I’m going to enjoy on the G2.
I always kick myself because my parents had a badass offset smoker years ago and as a teen I didn't know enough about it to actually use it properly. The one upside is it made great burgers

Hey Ronnie! I look at the pits more as different tools for different jobs. I still bbq the majority of my food on a pellet smoker (mainly for the convince) is it just as good as sitting by and offset smoker all day? No, but after a while you learn a few tricks to get decent bbq while getting a good nights sleep as well. I would keep the offset and compliment it with a pellet smoker.
Currently I run it without the tuning plate. But the pit would get WAY too hot on the right side without the flame baffle. But….that might make a good video…lol
Old country Gen 2 is a great backyard offset. I have about 10 cooks on it and it is easy to use and does not take much fuel to keep it running.
For real! I have about 4 cooks on it, and I LOVE it. Been digging your G2 content. Let's do a G2 collab! lol

I just got an old country offset for free. Nice solid smoker had some rust. I just beat it out with a hammer, and it's still solid.

Try running the smoker without the rack in the fire box you may find it helps hold heat more

To season the smoker I used rendered beef tallow and just water on the ribs :)

It is super heavy. Imagine lifting 30 something pounds every time you have to open the lid. Deal breaker for me.
I rigged a counterweight on mine with aircraft cable pulley an couple 2x4s and a 25lb weight - much easier to manage!
