      I too started brewing kombucha after going though an serious antifungal treatment. I had been getting injections into my spine so I didn’t have to take pain killers. One of the injections were filled with mold and caused fungal meningitis, which almost killed me. I owe kombucha for helping my gut get back to normal again. I only stopped making it, because I was tired of exploding bottles. I used fliptop bottles and tried to make sure I was burping them, but still had a problem with that... anyone have a suggestion so this doesn’t happen again?

      Sis Carmichael where are you getting your bottles. I get mine from a brewing supply store or I buy grolesch beer in the swing top bottles and reuse them. I have never had a bottle explode. Not all bottles especially decorative swing top bottles are made of a thick enough glass to stand the pressure of carbonation. How long are you letting the 2nd ferment stay out, that may be building up too much carbonation. Or maybe you are using too much flavoring on the second fermentation. I never let my second fermentation set out longer than the 5th day, usually 4 days is recommended. 1 to 2 ounces of flavoring per 16 ounces of kombucha is recommended.. You can use 1 to 2 ounces juice or make a slurry out of fresh fruit and use 1 to 2 ounces of that per 16 ounces.

      @@siscarmichael2949 Just do the 1st ferment or use old kombucha jars. My flip top bottles haven't bursted yet but a lot of the drink fizzed over the sides even with burping. I'm using the old kombuvha bottles with plastic tops. They aren't as air tight so they dont spill over as much.

    Kombucha has helped me with my stomach gastritis problems. I have had heartburn problems for years. Doing so much better now.

      I just learned this recently with kefir so I think it is interesting but I was told honey is an antibacterial so it's not good for kefir and that does make sense so how can honey be good for scobies?

    just finished my first batch today finally finished the second fermentation. added ginger root, cinnamon and some more sugar to the second fermentation. its delicious taste like ginger ale.

    I’m super sensitive to caffeine, I can’t have it after 2pm. But I always drink my
    Kombucha in the evening and sleep fine! I’ve just shared a Christmas booch recipe over on my channel. SO GOOD!

    Their is more alcohol in a piece of fruite , James, and other vinnagers than in kombucha. My entire family drinks kombucha, from age 2 and up. My children drink this several times a day. A few years ago I suffered horribly from candida, IBS, and gall bladder issues. My whole digestive system was sick. I tried everything to cure my body. We grow most of our own food, eat little meat, but also grow that as well. I would end up in the hospital 2 times a year with unbearable stomach pain. The doctors would shoot me up with morphine, tell me its just probable IBS/gallbladder, and then send me home. I read about the Manny benefits of kombucha and decided to try it. Well within six months my Candida was gone, no more heart burn, my bowls were flowing regular( was only going number 2 a couple times a week), my complexion is wonderful, and Im pretty sure my gallstones are gone. In fact my entire family has not become I'll in 3 years. My children used to suffer seasonal allergies, and seasonal colds like clockwork. Not any more its been 3 years with only the occasional day bug. I don't see that as the body becoming sick. I see it as the body taking the day to fight illness, and winning. On these occasions I give my kids a couple shots of master tonic made with kombucha vinegar, ACV, peppers, exc... My daughter suffered with cold sores 4-6 times a year since she was 4. She was 13 when we started drinking kombucha and she has only had a cold sore once in 3 years. My family as well as my relatives are grateful for the miracle of kombucha. P.S You should make your own the stores taste horrible, not to menchon expensive.

      kombucha is a fungal tea so how you think this can cure your Candida it is a fungus fungus is a yeast it might have suppressed what was happening because this is a stronger fungus sacchramyces cervaciaa is very strong. and there will come a day when your immune system can no longer withstand the fungus that you're introducing every time you drink it there is no form of yeast fungus whatever name you want to give it mold at all is under the same umbrella is acceptable to the human body and if you read about kombucha it actually tells you it is not meant for people who have no immune system so what is that saying?

      I completely agree with you Stacy, the same things happened to me, just received second hip replacement, not to mention other little things, five times in hospital, for guts pain and constipation, Doctor augmented higher dose for too high blood pressure , I was blaming Kambucha although only started little before my hip operation, since July went back to make my own Kambucha or jun Kambucha I make both with honey instead of sugar, sugar is okey too only with Kambocha scoby not with Jun, all the problem s have gone, my guts is fine the blood pressure is dropped drammatecly some times too low, i I share the Kambucha with my sister, she has not been well, she loves the taste and all her health sensitivities have now gone, back to her law firm, with second award winning this year, for good law service to the community, her working parteners, buy kambucha in bolk they have no time to make it, as you say it is never the same like the one we make at home, I love mine, I make mine with second brew it tastes like an expensive champagne, today I am due to make it I make sure I am never left without it!!! God bless the people who invented this wonderful drink!!!!!

      Rebecca's approach is theoretical, that fungus is fungus and is not good. Could there be good forms of fungi for the human immune system? Read others experiences and keep your analytical mind open.

    I have to disagree, I find it addictive, the taste and the slight bubbly-ness I crave 😉 and I never liked sodas. Mixed with some ginger bug is sooooo yummy!

      It is very addictive! I find that I crave it more after eating cooked foods. Whenever I eat raw, not so much. Gingerade and Original are my favorites...

    Thank u for the info! I am head over heels for kombucha. I don't really know when I tried it for the 1st time but for me, as far as health benefits, when I drink it I feel a looseness in my joints that is so relieving. I suffer from inflammation in my joints & idk if there's a scientific reason for it but kombucha helps! I'm on my fifth batch at home! First 3 were trials that turned into errors 😅

    Thank you for the information. I have, through exploration on the topic, come to understand that sugar cane is the optimal source available for production, and results will be significantly compromised with the use of artificial or alternative sugars/sweeteners. This part requires further consideration.

    This reminds me of the drink Mabi, or mauby in the West Indies and Carribean area. But that is made from a special tree bark and sugars.

      What don't u like? Is it the acidic taste? If that's it, I've found a solution to that. I'm not a fan of sour flavors myself. If it's because u don't like tea that much, my solution to the sour taste wich I use in second ferment phase will help there too. Message me if interested, I'll happily give u my recipe to fix that.

      Cane sugar is necessary to feed the yeast in the drink.

      Ema Glavin no it isn’t. You can use many other carbohydrates like honey and fruit juice. Cane sugar is the most common and the most versatile, however

    Also their are some people that say their throat swells when first consuming kombucha or may have other exaggerated discomfort in other places, well their is a reason for that, its usually a symptom of detoxification. As a child I used to suffer quite a lot with strep throat, and as a adult other throat bacteria. Well when I started drinking kombucha my throat got sore,and swell up around the gland area. It felt like I was at the beginning stages of a throat illness like strep throat. But I was feeling just fine otherwise. I did some more research, and found that while kombucha is detoxing you its forcing lingering/hidden stuff like bacteria or other poisons excedra..... in the body to resurface. Making the body to expel this leftover residue once and for all. I found that after a few days the soreness and swelling went away, along with my twice yearly sore throats. 3 years later not once have i suffered bacterial throat infection in all that time. I had further confirmation of the detoxing. During the first few weeks of the family drinking kombucha my daughter age 9 came to me complaining of a itchy rash on her legs. (The week befor I had just discovered the fact about kombucha detoxing symptoms) because of my newfound knowledge I realized that the poison oak that she had at age 4 was resurfacing in the exact area 2 years later. Because of the kombucha her body was detoxing expelling the residue of her sickness. Needless to say her reemergence of symptoms was short lived, and only mildly irritating. My son who also had suffered from throat issues several times a year had the same detox symptoms as me. Three years later he has yet to suffer another throat infection.

      I take no issue with what you said except the fact about detox. If you have a liver and a couple kidneys your body does all the detoxing for you.

      kleineroteHex - I use the bulk flowers (from frontier co-op brand, on Amazon). I add horsetail tea/herb for the health benefits (rich in silica). I boil the horsetail herb in the water for 10 min or so to get a good extraction. then, I pour the whole thing into a mason jar with my hibiscus flowers and sugar in it. I let it steep for several hours to overnight. don't know if that's a perfect system, but it has worked well for me. when I bottle it up, I add ginger and I think it's delish. :)

    I love this stuff! I'm getting some scoby's that have been purported to be grown in hibiscus tea and green tea (jun). I really hope they work as well as my Kombucha scoby! One of my soap making friends has made soap with the extra scobies. I love Kefir too. :)Jen

      I drink the Remedy brand kombucha from Australia, here in New Zealand we get heaps of imported goods from Aussie. My favourite flavour is the Apple Crisp flavour. I usually buy a different flavour every time so I don't get bored but if I was only allowed to drink one flavour for the rest of my life it'd have to be Apple Crisp.

    i love GT's abd is the only brand iv found to be remotely drinkable in comparison to home brew (original & ginger). i do get a mild buzz if i pound a hole bottle down fast, i drink one to get me going while driving to a gathering and at the end of the night instead of a few more beers on a work night, and have never woke up feeling rough😉

    The first time I had kombucha was when a senior and friend was bringing juga of different ages kombucha for sensory test for his thesis and I was hooked - I haven't had kombucha after that but missed the feeling
    I have sinus and pretty much my nose, throat and ear are problematic - I was having very runny nose and sore throat was chugging a bottle of that and voila my nostril cleared up though it got clogged again after an hour or two and I got no more but I think the next day I felt better than normally I took medication for that (my sinus or whatever it is came often that I don't bother getting drugs, like it gets boring and maybe less effective)
    Currently, trying to brew my own kombucha - wish me luck 🤞

      It is still responsible to include the possible negatives. Like they said, not ideal for every single person. Plenty of people in the comments have had good experiences regardless of the possible negatives.

      Very true @ Saved Starr. I have made Kombucha with Raw sugar and even piloncillo (a kind of Mexican sugar cane). I like to experiment. Oh, and BTW, the Kombucha made with honey is called Jun. They got that one wrong as well.

    I’ve been brewing my own and I love the taste. I get a little tipsy because I’m not a drinker but hey that’s not a bad thing right? I did back off of it for awhile because I was getting bad acne and felt like I had the flu. 52 with pimples - it was awful.

      SuperfoodEvolution....oh absolutely! Everyone in the house teases me. I’m the only one that had the acne and flu like symptoms but I was the only one in the house that drank diet pop most of my life. I thought that was interesting. It has helped my diabetes and it has been easier to lose weight. I already was able to go off of one of my meds.

      iiCrai ...I cut back to 1/2 a bottle a day and then increased it. Once I had a couple break outs, my skin has looked better than it ever has. I think you will have good results. It flushed my system so well is all. I still drink it and usually have a bottle a day.

    I don't think if ingested correctly the health issues mentioned would be effected. One is only required to ingest 1 oz a day, 3 oz if one feels they are getting sick, around others who are sick, or feel the immune system is being compromised. People who drink commercial kombucha drink the whole bottle which is not needed. My son has a high allergy to mold, but will drink a whole pint of my handcrafted kombucha with no side effects.

      Turtlefoot69 kombucha has fizzy bubbles and tastes e like soda. It tastes better than apple cider vinegar in my opinion. It also different bacterias.

      Turtlefoot69 kombucha is more palatable. ACV burns going down kombucha is smooth. They both are beneficial in their own ways. It hard to discribe the fast of kombucha its unique. The only thing that comes close to describing the overall taste is somewhere between mountain dew, and apple cider.

      Thanks guys, i usually have ACV+water before meals to help with digestion and good gut bacteria from what i have heard but i see now i can do that with Kombucha too by the sounds of it.

      Yes you can use coconut sugar but it will be too much for the bacteria and it could create the perfect environment for mold to grow

    glucoronic acid and gluconic acid are not the same. the presence of glucoronic acid in kombucha is disputed, old studies misidentified glucoronic acid, whilst it was something else- newer studies could hardly find any... you can't make that claim.

      Actually, what he said is correct. During the fermentation process, the alcohol is first created by the Sacchromyces yeast and then the Acetobacter bacteria convert that alcohol into acetic acid. If you cut the fermentation short and don't allow enough time for the Acetobacter to do its thing then there is more alcohol remaining in the beverage.

    Kombucha I have made for well over a year. I don't want to take Probiotic pills so I make my own kombucha. I have no issues by taking it. I drink about 8 ozs/day. This is most highly recommended video for people to listen to before making their own kombuchu.

    I made a successful batch of kombucha, with a healthy clean and happy looking scoby , I used all organic tea and a high quality raw sugar.... it tasted super good... but I had to throw it away after I started having yeast infection symptoms . Now I’m afraid of all fermented foods including pickled veggies... bread... yogurt... and I had to stop taking my probiotic capsules.
    I still can’t understand how ingesting bacteria and yeast is suppose to heal the gut!
    Now how I healed myself was super simple, I ate nothing but raw fruits for 3 days, berries and melon along with other seasonal fruits... because raw fruits are natural astringent for the body.

    Does anybody think all brands of Kombucha tastes the same? At least for me, it does.

      They actually taste very different for me. I now make my own and there is a difference from batch to batch. I use honey. I find raw honey make a much more flavourful Jun than the pasteurized one.

    I was given a scoby and made one batch of kombucha which turned out great. I'm now making a second batch but the scoby isn't floating on the top, but staying on the bottom. Is this okay or should I add more sugar?

    Interesting...just pulled out my boyfriend's Synergy Kombucha from the fridge and it isn't labelled as having alcohol nor does it list any of the probiotics or yeast strains and it contains 20g of sugar per serving in it so unless you are buying the plain and unflavoured (added) kombucha you are getting about the same amount of sugar as in a soft drink.

      Michelle Levasseur Every bottle of kombucha I have had lists .5% alcohol on the label. Also, I have never seen more than 10 g of sugar per serving. Usually the ones I drink are 6-8 per serving. I like the Brew Dr brand, created here in Portland, OR.

      I just went in my fridge and looked at a 16 oz bottle of GT synergy and it has12g of sugar/bottle and then looked at a 12 oz can of 7up which has 38g/can of sugar. So kombucha has .75g of sugar per ounce compared to 7up at 3.17g per ounce. Soda has more than 4x the amount of sugar of kombucha. Let us say for some reason it did have 20g of sugar, that is 1.25g per ounce which is still less than half the amount of sugar in a soda. Also, I've been drinking GT synergy for years and it has always listed the probiotics and acids because thats its selling point, and it has always had a warning that it contains a small amount of alcohol and should be avoided by certain individuals. I think we can call this comment FAKE NEWS...

There are a few pertinent facts you seem to be deliberately overlooking such as there are two years in between my comment and yours and second, look to the other comment and you'll find different numbers from yours and mine. Ever stop to think where each of us live might have something to do with it? Ever stop to think that somewhere a packaging error might have occurred?
      What I wrote was accurate on my end but I can't speak to why there were differences. Maybe get down from your gatekeepers high horse and realize there is more than one dimension to anything.

      Any drink with sugar can make you gain weight if you consume enough, but kombucha tends to be much lower in sugar then most things we drink. If you use it as a one to one replacement for more sugary drinks that you already consume, it can slow or even reverse weight gain. If you are trying to gain weight, there are better alternatives out there.

    I'm allergic to many things including mold yeast mildew fungus etc. Did shots 86-09 myself my doc retired new one wanted all the patients and for them to come in monthly. Now they want you in every week! I am a RN gave my own injections I'm not dropping $$ on those materialistic bastards so I've started making my own pretty much from scratch grew my SCOBY from GT see if desensitization works❓

    I make kombucha for others, but if I drink it I get yeast infections. So the yeast species may be opportunistic pathogens, at least they are for me!

      Did it ever occur to you that you have something inside you to feast upon? Toxic matter is what creates an overgrowth in yeast, parasites, etc. All of those things serve a purpose. So it's about being too toxic to begin with. I would look at your overall diet and lifestyle.

      Frequent yeast infections are really concerning and serious. I reccomend going to your OBGYN and getting tests. You're higher risk for cervical cancer as well

      It may be due to your body is detoxing. Like when your sick the body says sleep I’ll heal you. Similarly your body is cleaning house. I’ve experienced similar results in detoxing in the beginning.

    The carbon dioxide in Kombucha neutralizes stomach acid (HCL). This is a con that no one mentions. That's very important. Comments anyone? (Please no comment about letting it sit out to flatten. Enlighten me?)
    If there is a flat version, I would drink more of it. I actually like the taste and I know the cultures & enzymes are good for my biome.

      AM. I believe your chemistry is wrong. Carbon dioxide I know as a fact is the why we have people all nutty over global warming. CO2 when dissolved in water becomes carbonated soda or known in the chemistry profession as carbonic acid -- acid being the key term here. When you ferment and bottle you are pressurizing CO2 in to kombucha (Water H2O) and the production is carbonated water or carbonic acid. And the last time I got to checking throwing acid on top of more acid just is like putting more wood in the fire.

    I made my own kombucha be careful l had an allergic reaction my throat swelled up felt like I was being choked made other batches had the same affect also other family members had a similar allergic effect.

      Slightly. Usually less than 1%. Most of the fermentation is bacterial, not yeast-based, so acid is the by-product, not acid.

      Jasmine KC rejuvelac , it is fermented drink made with wheat. Yet, even if you are allergic to gluten, it is still safe to drink it. Search for Ann Wigmor she has books teaching how to make it, along with how to sprout seeds and nuts for exceptional health.
