So glad Found you! I just inherited this amazing vintage machine. I thinks a 1985 (Olympia Express) from the serial number. I'm looking for all the info I can find on how to maintain this beauty as well as my Uncle did. Do you make the hard rubber seals and the "third shot" cooling device? How do buy them? The machine is in great shape but the basket falls out so knocking out the puck is tough because its so hot. Was there a spring or something that is possibly missing from the porta filter?

@@orphanespresso such a great resource. I’m up to Video 13. Question which tamper should fit, your 49.4 or 49.5mm ??? I don’t know why the basket just falls out when I turn the portafilter over to knock out the puck. Seems way too loose?
@@SurvivorStory The baskets commonly fall out - original design did not have a spring to hold it in. Either a 49.4, or a 49.5 tamper will work well - a 49.0 is generally considered a bit too small for a good fit.
It's automotive, can't remember if it was vacuum line or fuel line. Take your gauge, or fittings with you to be sure of the size - you want it snug, but not so difficult to get on/off that you don't use it (or pull your machine off the counter trying to unhook the tubing!)
I'm slightly obsessed with this concept...I personally believe the only arrangement that offers the opportunity to consistently pull a near perfect shot is a direct manual with a true heat exchanger (not a siphon concept to stabilize the system, like the Cremina). I've searched for that arrangement for years...I've owned a lot of machines...I've only found a single machine that fits the criteria, the Gaggia Achille.
What’s wrong with just using the stock portafilter as a heat sink? Room temp or Dipped in a cold water bath like one beside you in the video. The pf doesn’t have enough thermal mass?
Makes sense! I was also thinking about the stock pf having little contact to the group. It seems like heat is only transferred through the ears/tabs, and maybe little from the group gasket. Other than that, I dont think the stock pf sides touches the group. It looks like the 3rd shot fits more snuggly and transfers heat even from the side(outer diameter)

How does the 3rd shot's cooling rate compare (percentage-wise) to simply using a spare PF to sap the excess heat? Also, consider adding the link in the summary box (or whatever it's called) rather than having to inquire about it in the comments. Thx
The spare portafilter only contacts the metal of the group at the bottom of the lugs. The third shot contacts the group at the lugs as well as the bottom of the group bell. Looking at the videos, the third shot is way faster than a cold portafilter (which I've tested). One can't state a simple percentage as Pavoni stock portafilters vary appreciably in mass (I have four). You can make a shim for a Penny-style portafilter so it will work like the third shot, but I do not think that is worth the hassle compared to a wet cloth. One of the mods at H-B cut up terry towels so the towels drape nicely around the group; that is a simple and effective solution, if not as elegant as the third shot.
@@baldheadracing By percentage-wise, I meant an approximation. That's all. Is the 3rd shot twice as quick, 3X, 4X as quick as a room temp PF? That type of assessment should be easy to realize with the GH digital thermometer that Doug is using here. #sidebysidefirsthandcomparison

Sorry - don't have an MCaL anymore to check it with! If the Gabor Naked 49 portafilter, or a Penny Bottomless portafilter will fit the machine then the 3rd shot will also fit.
My Penny bottomless portafilter fits my old MCaL with some care - the pf will blow off if I don't put it on just right - so it sounds like it'll work. Too bad I just did my "big" order earlier this month so I can't think of anything to get into free shipping - except maybe that Cup-One ...
I was checking some of the La Pavoni machines online last night. It appears they're only built for 240V current in the European markets. You would need a transformer to step the voltage down for it to work in the U.S. La Pavoni has NO presence at all anywhere in the Western Hemisphere, so if you need parts or service, good luck. It's a shame, because they're beautiful machines. and highly functional.

What type of tubing are you using on that makeshift pressure gauge attached to the steam wand? I’m trying to recreate. Love your stuff!

That can work just fine! The Heat Sink is handy if you only have one portafilter, and want to make successive shots a bit quicker.

@@severthee Correct! We did redesign the 3rd Shot so it would contact all the way around on the bell, as much as possible...
Do you brew through it or just plug it in for a few minutes to cool by contact?
Plug it in, takes about a minute, or so, and it cools by contact between the 3rd Shot and the bell of the group.

i have a pre-2005 elektra micra casa leva. that’s a 49mm portafilter. do you think the 3rd shot would fit this machine?
