Molasses is part of the cane juice which cannot be crystalized. It is removed from cane juice by a process called Centrifugation.
This part of the juice is used as fertiliser. A large part of it is used for Producing Liquor by fermentation.

Molasses is made from sugar cane juice. Not Jaggery. Jaggery is made from Palmara tree, fruit juice.
