My Favorite Weekday Breakfasts | Easy, Healthy Kid Friendly Breakfasts

  • In this video I talk about the benefits of breakfast, some strategies to help you make sure breakfast happens and my Top 5 Easy Weekday Breakfasts for Families. All these breakfasts include fruit and/or vegetables + protein + fat + whole grains. And some of the recipes call for granola. If you haven’t seen my granola recipe video, check it out!
    Here are the Top 5 and more details on preparation:
    1. Plain Yogurt or Cottage Cheese topped with fresh berries and oatmeal. You can add a little honey if you prefer it sweeter.
    2. Oatmeal
    INGREDIENTS FOR THIS YUMMY OATMEAL (FOR 2 SERVINGS)
    • 2/3 cup rolled oats
    • 1 1/3 cup water
    • Pinch of salt
    • ¼ tsp of cinnamon
    • 1 banana
    • 2 Tbsp raisins
    • 2 Tbsp peanut butter
    • ½ cup granola
    • 2 tsp honey
    INSTRUCTIONS: Combine water and oatmeal in a pot. Add pinch of salt cinnamon. Bring to a boil, then reduce to medium heat. Cook until water is mostly absorbed and oats are tender and heated through. Add peanut butter into a bowl. Add warm oatmeal on top and almond milk (or preferred milk) and mix. Then top with sliced bananas, raisins, granola and honey.
    3. Smoothies
    INGREDIENTS FOR THIS EASY GREEN SMOOTHIE (2-3 SERVINGS)
    • 3 cups kale
    • 1 cup almond milk
    • 2 medium apples
    • 2 bananas
    • 2 scoops vegan protein powder
    • 3 cups frozen berries
    INSTRUCTIONS: Put kale in bottom of blender, then add almond milk. Chop apples and bananas into large chunks, then add to blender. Add 2 scoops vegan protein powder (We used Orgain in this video). Add frozen berries (we used a combo of blueberries, blackberries, strawberries and raspberries). Blend until smooth. We usually serve ours with whole grain toast or left over frozen whole grain pancakes.
    4. Smiley Face Toast
    : All you need is whole grain bread, peanut butter(or other favorite nut butter) and a half of banana. Toast the bread, spread the peanut butter, slice bananas and create a face on the toast.
    5. Eggs + Whole Grain Toast + Fruit
    INGREDIENTS (2 KID SERVINGS)
    • 2-3 eggs
    • ½ Tbsp of butter
    + more for toast
    • 2 slices whole grain bread
    • 2 tangerines
    INSTRUCTIONS: Crack eggs into a bowl and wisk. Melt butter in skillet over medium heat. Add eggs and mix slowly with a rubber spatula. When it is close to desired consistency, turn off heat. Add a pinch of salt and desired amount of pepper. Toast bread. Peel tangerines. When toast is done, butter it and if you have any cookie cutters, use to cut toast into fun shapes! Assemble everything on plate.
