For newcomers: your weapon combos dictate your general playstyle. "Mainhand" weapons are more meant for your dominant hand, and usually have a bit of extra reach and/or damage. "Offhand" weapons are usually more responsive to movement, and don't 'lag' like heavy weapons, plus have some extra stats that are meant to synergize with the mainhand.
There's nothing stopping you from taking two "mainhands", but it's better to try to take weapons that make sense with one another. The dagger for instance is responsive and recharges dashes faster, while the axe hits hard and boosts dash damage; you end up doing lots of guard damage bumping into stuff all the time, and your dagger covers the blocking role while you sweep with the axe.
As for dashes, just remember you can turn your head to dash in that direction. Handy if you're surrounded - take a quick look, find an open spot, and dash.
