These dishes and the making are largely the same across the entire sub-continent. The tempering is done by North Indians too. Just the staples being rice and wheat respectively.. Incredible India indeed..!!

Here in South Africa when the Indians came as indentured labourers on the sugar fields of Natal, we did not have alot of coconuts, rice flour, coconut oil and some of the spices like kokum. But we adapted. For rice flour we use maize or corn meal for puttu. We use sunflower oil and not as much anymore, except at traditional occasions when we indulge. We do not cook with fresh coconut except for baking. We use more tomatoes instead. Now with internet, we are learning again. My next-door aunty grew kokum in her garden for fish curry. Im getting a baby grinding stone from Johannesburg next week. It was imported from India and i bought it at a prayer goods store. Will definitely be trying this recipe and adding fresh coconut. I doubt i would be able to eat lunch after this morning meal😊 i loved how earthen cookware was used and found that tower steamer so unique along with the rice and coconut "bread(?)" I wonder if this bread can be made without the tower steamer in just a regular steamer. Also wondering about its taste 😊

It's not bread. The layered rice and coconut steamed dish is called 'puttu' ( emphasis on 'tt') a regular breakfast dish in Kerala.
