    LEMONGRASS CHICKEN THIGH. KIP GEMARINEERD IN CITROENGRAS.
    Ingredients:
    2 lbs. chicken thigh
    2 garlic cloves
    ¼ onion
    1 slice ginger
    1 stick lemongrass (chopped)
    1/4 tsp black pepper
    Pinch of salt
    2 tsp light soy sauce
    1 tbsp. fish sauce
    2 tbsp. brown sugar
    Some cooking oil
    For the sauce:
    2 tbsp. fish sauce
    2 garlic cloves
    2 tbsp. sugar
    1 tbsp. vinegar
    1 red Thai chili pepper
    A few drops of hot water to help dissolve the sugar
    Mix all the ingredients for the sauce as shown in the video and set aside.
    Let’s marinade the chicken:
    Mix the garlic, ginger, onion, chopped lemongrass, black pepper/salt, fish sauce, light soy sauce, sugar, some cooking oil, spring onion and mix.
    Now add the chicken and mix.
    Cover and let marinade overnight in the fridge.
    Next morning, take it out of the fridge and mix the chicken again.
    Cover and let come to room temperature.
    Heat some oil in a pan and fry the chicken thighs.
    Flip it over every now and then.
    Take it out when the chicken is nicely brown.
    Cut the chicken into strips and arrange on a serving platter.
    Pour the sauce over the chicken.
