It's a combination of different things, you'll need to listen to the original song and notate on a notation software like MuseScore, Sibelius,... or you can directly play on the piano and record the midi file on a daw like Reaper, Cubase,... Then record the midi file on Synthesia and use a video editing software, or you can simply use programs like SeeMusic to make it easier.
