Great question. My answer is, you are correct they come in short. This one as you saw with the diagram has a 200mm blade length. NOW, if you can handle a slightly longer knife than say actually 220mm of blade length, then I'd recommend the 240mm B1 HADO x Chefs Edge gyuto instead. Why? Because it has a longer and flatter belly profile I think would come in handy say compared to the one in this video.
