Gorgeous saya! Just wanted to ask you frankie if you find the 210 hado to be long enough? Because I am thinking to get one and I am considering the 210 or 240 gyuto, as sakai knives already come in short

Great question. My answer is, you are correct they come in short. This one as you saw with the diagram has a 200mm blade length. NOW, if you can handle a slightly longer knife than say actually 220mm of blade length, then I'd recommend the 240mm B1 HADO x Chefs Edge gyuto instead. Why? Because it has a longer and flatter belly profile I think would come in handy say compared to the one in this video.
