Just wanna say a few things and please correct me if im wrong... I am Chinese and went to high school in the uk where i started fencing. I am 6ft 1 and the people I fence in matches are nearly as tall if not taller. They tend not to move a lot but do lots of blade work (not excessive but certainly more than Asian fencers would normally do). I went back to China for a gap year and i observed a very different fencing style where people have fast speeds and good distance controls. This makes sense for asians because we are normally shorter in height so speed is an athletic edge. Coaching in Asia mainly focuses on three parrying positions: seconde, quarte, and sixte. Certain techniques such as flicks and prime arent normally used. Now going back to this match: Borel, as a European, doesnt normally have the chance to fence against people below 6ft whereas i believe park's training has involved many tactics in fencing against taller fencers. You can see borel got tricked by park in the first few points because of park's speed and later didn't maintain the right distance so lost another few points. Theres another vid of borel fencing against yamada from japan on youtube which further shows how fast and tricky asian fencers are....
Man the Korean fencers really fence like you're watching a movie in 1.5 speed across all the disciplines.
In terms of raw physically capability they are always a joy to watch!
