Filipino Style Campfire Cooking: Dinakdakan & Pork Liempo (Roast Pork Belly Recipes)

- This is a first in a series of videos relating to Filipino style cooking over a campfire. I took a trip to Lake Britton for some quality time with friends and family. When it comes to camp food, my family definitely does not play around. I decided to cook Dinakdakan, which is a roasted pork dish from the northern part of the Philippines. Many people familiar with Filipino cuisine might identify the dish as sisig but there are many variations to the recipe. Vivien and Jeremiah doubled down on our pork fiesta and cooked Pork Liempo immediately afterwards.
Ingredients:
2lbs Pork Belly
8 Pig Ears (You can substitute with other pork cuts)
1 Red Onion (Chopped)
3 Serrano Peppers (Chopped)
1 Ginger (Minced)
Calamansi (Or 2 whole Lemon/Lime)
Mayonnaise (or pig brain if you get down like that)
Salt & Pepper
