    BROCCOLI ARANCINI
    makes 4 servings
    1 cup leftover brown rice
    1/2 cup steamed broccoli, minced
    1/2 cup cooked green lentils
    1 tablespoon nutritional yeast
    1/2 teaspoon salt
    1/2 teaspoon black pepper
    1/2 teaspoon red chili flakes
    1/2 cup bread crumbs
    2-3 cups safflower or canola oil, for frying
    1 cup tomato sauce (recipe below)
    In a mixing bowl combine the brown rice, broccoli, lentils, nutritional yeast, salt, pepper, and chili flakes.
    Stir well to combine. The rice should be sticky enough that when you form the mixture together it holds in your hand. If it doesn’t, then use a fork to mash the ingredients together until they’ll stick when formed into a ball.
    Pour the bread crumbs into a shallow bowl.
    Form into tight balls (about 3 tablespoons in size), and coat in a layer of breadcrumbs. Set aside on a plate, and complete with the rest of the rice balls.
    Warm oil in a skillet or dutch oven on medium-high heat. Test the heat of the oil by dropping a single rice grain into the oil. If it bubbles it is hot enough. Double line a large plate with 2 sheets of paper towel to catch excess oil after frying.
    Fry the rice balls on each side, for about 5-6 minutes total. They should be golden brown on all sides.
    Transfer the fried arancini to the lined plate, and allow to cool for about 5 minutes before serving.
    Serve over tomato sauce.
    TOMATO SAUCE
    1 25-oz can crushed tomatoes or tomato sauce
    2 cloves of garlic, minced
    2 teaspoons fennel seeds
    1 teaspoon black pepper
    1 teaspoon red chili flakes
    1 teaspoon dried thyme
    1 teaspoon dried basil
    1 tablespoon nutritional yeast
    1 teaspoon sugar (optional)
    Place all of the ingredients into a sauce pan on medium heat, and simmer for 20 minutes with lid ajar.
    Remove from heat and season to taste with salt. Serve with arancini, pasta, etc...
    BLACK BEAN HUMMUS
    makes 4 servings
    1½ cups cooked black beans, or 1 15 oz can, drained and rinsed
    1 garlic clove, minced
    1 tsp cumin powder
    ½-1 tsp salt
    3 tbsp tahini
    1 tbsp lemon juice
    2-4 tbsp water or bean cooking liquid
    ½ tsp cayenne pepper
    Place all ingredients in a food processor. Blend until very smooth and creamy. Serve with chips, pita, or raw sliced veggies (carrots, beets, cucumber, zucchini, broccoli, etc…)
    KALE MANGO SALAD
    makes 2-4 servings
    1 bunch kale, stemmed, washed, and finely chopped
    1/2 cup cumin lime vinaigrette (recipe here: bit.ly/5EasySaladDressings )
    1 cup roasted sweet potatoes
    1 cup cooked green lentils or black beans
    1 ripe mango, diced
    1/4 cup toasted pumpkin seeds (optional, if they fit within your budget)
    Place the chopped kale into a large mixing bowl. Pour the dressing over the kale, and use your hands to massage it into the kale until it is tender, about 4 minutes.
    Add the sweet potatoes, lentils, mango, and seeds, and toss well.
    Serve as an entree salad or side salad for any of these other recipes.

    I have a recipe for White Chicken chili that I veganized and it's my favorite meal
    I use:
    2 cans of black beans
    1 can of corn
    1 can of whole white beans
    1 can of slightly mashed white beans
    (To replace the chicken)
    1 can of tomatoes with chilies
    (And whatever else you want to add in too!
    I feel like I might be forgetting something...)
    Then season (Heavily!) with salt, pepper, cayenne, chili powder, cumin, smoked paprika ,and anything else you see fit!

      Also if you want a thicker soup which I really like, boil it down with the canned liquid so that it thickens and add a little bit of cornstarch. Then serve with vegan sour creme, add vegan cheese on top, and crush tortilla chips into it before you eat it (or just eat it with chips so you don't dirty your spoon)

    Hi.. i am from jordan.. i can advice u with meal we eat always.. called mjadareh.. yo boil ur lintel then bring ur rise but them together untill rise is done and absorb all water.. season with Sault and pepper..after but ur tomoto souse over it . Or with green salad creat by u.. it is one of our lunch

    I have a quick and cheap recipe for low fat and tasty veganized rillettes (I'm French so this is a stapple of mine haha) :
    Chop and simmer one onion, two shallots and two fresh garlic cloves;
    Add to it a puree of rinsed white beans (one can) with red beans (one can), once the mix has cooked to a pinkish and stringy texture, add a table spoon of mustard and plenty of sea salt.. cool it 2 hours in the freezer and enjoy on a piece of bread :)

    The red lentil soup is hands down one of my favorite recipes of all time! It's healthy, flavorful, inexpensive and so easy. I make it all the time and it's especially awesome to make ahead and take to work. Thank you for sharing!

    You could make a version of a Turkish (white) bean stew: Dice some onion, potato, tomato, carrots and throw 'em in a pot with the beans, some olive oil and water. Season with salt, black pepper, parsley and dill. Then serve it with rice or bulgur. Sending you lots of love from Berlin :) (My mother sometimes puts a whole onion in there to cook with the other ingredients. Definitely try it if you love onions, haha.)

      I love to make a chunky dip with a jar of salsa, or homemade salsa, a couple of cups of black beans and a cubed mango. Stir it all up and scoop it up with natchos or similar chips like scoops. My friends love it when we are on my back deck having wine and conversation. So yummy.

    Everything looks fabulous. My favorite: Minestrone. Sautee onions, garlic, carrots, celery, rosemary, basil, oregano, a little hot chili pepper in a large pot. Add kale, crushed tomatoes, water, red beans, sea salt, and simmer for a couple of hours. (I'm assuming soaked, uncoooked beans). Serve over pasta. I usually make a big pot and eat it all week.

    These recipes look so good and easy! I would make a sweet potato black bean chili with the tomatoes, onions, garlic, and spices to serve over rice, topped with nutritional yeast.

    Though I'm not vegan, I love watching videos such as yours for new healthy meal ideas and prep tips! By the way, so far you are one of the few people here on youtube that actually use seasoning! I'm following so many channels that I'm kind of shocked that many don't even use the traditional salt and peeper or some tiny bit of Italian spices and some olive oil.

    I took this challenge and made all the recipes except for the black bean soup which I turned into a chilli with kale. The arancini are amazing!! I love the red lentil soup too. It was so fun. Thank you for sharing :)

    i find that if i'm prepping rice or have leftovers, no matter when i plan to eat it, it's best to put rice in the freezer because it preserves the moisture and keeps it from getting a weird texture.

    I would have made Lentil Pilaf in a 2:1 lentil-rice ratio. Then used 2 cups of it plus oats and spices to make a batch of oat patties which yields about 36, plenty to freeze for later. Black bean chili with baked sweet potato and chips. Risotto with red lentils. Baked sweet potato fries topped with kale salad or mango salsa. Mixed bean soup or salad. Korean vegetable soup with sweet potatoes and kale plus rice and homemade kimchi. The possibilities are endless.

So today I was looking at old books I had around the house trying to downsize and I found a book I have had for many years and never looked at until today. It's called "your body can heal itself" over 87 foods everyone should eat." Well with the exception of some of the meat exchanges and dairy I can tweek what it says in the book for "vegan" life style . the copy was written in 2008 and I know I have had this book for well over 7 years so I'm taking this as a sign that I need this vegan lifestyle to get off of the pharmaceuticals that the doctors tell me I need "not to cure" but to help mask my health problems" I am still going thru my transitioning period and your channel and vlog, blog Instagrams have been helping me. My sister is helping me when I do try a new recipe she is willing to try it so I don't feel alone. I thank you from the bottom of my heart for you extreme knowledge and cooking expertise.     Stuffed baked sweet potato with the kale and black beans (and onion, cumin, salt, pepper, nutritional yeast and chili powder or cayenne or chipotle depending on what you have!)

    If you buy peppers the next week, you could make stuffed peppers with the rice and beans (or lentils) and tomato sauce.

    I love making kale soup 😋 my son is allergic to lentils so I use black beans, potatoes and white beans
