    I also experimented with drying whole persimmons this winter. I used 95F and it took 5 days for Fuyus. After some experimenting, I found the texture to be better if they were just dried an hour or two a day after the first day.

    Apparently people massage the fruit to keep them soft and pliable while drying.
    Also, they dry brush the outsides to distribute the sugar.

    what is an optimal temperature to get better taste? I tried at 80 c and did not like it, then put on 50C, dried in 3 days but the taste was not still desired. Maybe to lower the temperature till 40?

      It took me days and days for the whole ones. Flattening as I could.

      They were not ripe to start with. As they dried, they get sweeter.

      @@ViviansDIYProjects Are you sure, they seem small, like my American persimmons which are about 2 inches in diameter when picked.

      @@AmbachtAle these were the smaller ones. Definitely not American persimmons, no seeds either.

      @@ViviansDIYProjects They probably mean the Japanese style (Hoshigaki) where you peel them but leave most of the cap on with the stem: you tie a string to the stem and air-dry them for about a month, every day you massage them and they dry flat.

      @@AmbachtAle- do not need massage for the first few days. Massage them after is formed the dried skin, not necessary every day but days apart. Air/fan dry are best methods. Completed dried in 3-4 weeks, the white sugar coast star forming in container. I personally do not like Persimmons be dried in machines.
