Looks wonderful! I love fried rice, its so versatile, add what you like. I always make rice with less water, prefer it dryer for most things, and I don't have a rice cooker either, I've found a dutch oven makes perfect rice. Start it on the stove, bring to boil without lid, then give it a quick stir to loosen any grains of rice stuck to bottom, put lid on and put in a 350 to 375 oven for about 15 minutes, take out of oven and let sit about 10 minutes. For the stir fry, I also do the eggs separate and set aside. I like to also add chicken or shrimp, peas (frozen), carrots (fresh, diced and steamed prior), onion and bean sprouts if I remember to buy some, I don't usually have those on hand. I mix up the stir fry sauce in a small bowl to just add at once, soy sauce, fish sauce, a little sriracha, fine minced garlic and grated fresh ginger...and sometimes a little rice vinegar and honey.
Make Pad Thai next with your wok!

You made that like an Asian pro chef! I was watching the rice carefully because I thought it was starting to crust on the bottom of the wok. Normally I'd add a couple drops of water to fix that, but the frozen vegetables added enough moisture to unstick the rice from the bottom. That didn't look too hard for me to try either.

At 3:01...Oh but this sounds really good Pam! The was a fried rice dish whereby my Ma used to make for us kids that
was pretty good too! The steamed rice that was leftover from the night before, she would brown along with sautéed
onion in a buttered fry pan. She would add in oven roasted chicken dark meat that was already pulled into smaller
pieces along with some already steamed green beans and just salt and pepper to taste and that was all that she did!
As for overall simplicity, it worked and us 3 kids were absolutely stoked each and every time to come back for seconds.
Although we were not thoroughly into oriental food dishes aside from Chun King canned, ready made, through me all
together on some infrequent Friday nights, the dish that I mentioned seemed to fit the bill pretty good! This was back
in the early 70's when businesses just didn't fair that well and the money coming in for virtually everybody was struggling
to make the household food budget stretch. Yet, I am quite happy to see your presentation and turn out that just has to
be tops, because I already know Pam that you are a very, very, very good if not great cook! So let's have at it!! Those wok
pans are predictable and the heat distribution and cooking time is very efficient! The only true down side of owning a wok
is the storage space. I do like the idea of having a wok but my small alley kitchen of about 7' X 9' just isn't cutting it!
Another fried rice dish that I could foresee is by using some pork butt steaks as a left over and slicing it thin. As for the
seasoning that I would be most willing to use is "The Five Spice" which is great to use on you oven pork roasts with some
pork gravy! As for choice of frozen veggie, peas and carrots are typical BUT if you were to use peas and pearl onions, that
    would be great too!!

So Jasmine or other Long grained rice, not Sushi or med grained rice and use a little less water and less cooking time. Okay. I'm actually trying that right now. I have failed misserably multiple times and broke 2 wooden spatulas in shear disgust and frustration getting sticky clumps of rice. I always always used my favorite rice, not America's favorite rice mind you, mine and it's Sushi rice. I love me some sticky rice, when it isn't a fried mess. So here's to trying the proper rice (I wish someone had told me what to use years ago). Asian usually have at least two different varities of rice lengths, maybe even 3 or 4. I know of the Sushi med grained rice for that sticky white rice that I actually like, not that dried long stuff that sticks in the throat. I'm not typical American. So then there's the Jasmine rice and Basmati which are long grain and there's suppose to be a short grain for desserts? and an extra long grain for what use I do not know. So thanks Pam this time I think that I got the missing info that I needed, I hope.😊 OMT folks, don't use brown rice unless you want frustration. Ask me how I know😅
