- You aren’t going to believe how easy it is to make this creamy no-bake mascarpone cheesecake! It’s a stunning dessert for any occasion. Mascarpone gives the cake a cheese-cake like flavor, which is highlighted by a layer of cherry jam on top and a super simple almond biscotti crust on bottom. Freezing the cake gives it an ice cream-like texture (the cake slowly softens as you eat it, turning ultra creamy).

I have followed and made many cheesecake recipes but yours is one of the best recipes I have tried.
The main point is using Mascaprone instead of cream cheese. i also added 2 spoons of yogurt as I dont like if its too sweet.

If you add a little bit of gelatin it’ll set in the fridge rather than the freezer. You can also achieve a set in the fridge by using a cream with a higher fat percentage. Around 48-50% should set in the fridge without any gelatin. I don’t know if you have cream like that there. Here in Australia and in Britain it’s called double cream. I’ve done it and it does work. I used cream cheese with it but mascarpone has a higher fat content than cream cheese so it should work with that.

I did a very similar recipe as the filling for a tiramisu Christmas 🪵 cake. My lesson learn for the proportion is to use 50% mascarpone and 50% cream. I follow a recipe that specify 700g of cream for 400g of mascarpone and my guess though I did a cream filling as nobody detected the mascarpone.
Please cup of sugar = how many grams
Cup of heavy cream =? Litre
Can you give us more details because we dont use same tools to measure ingredient

My daughter visited last weekend and left a carton of mascarpone and I’m trying to figure out what to do with it. Well, I don’t have a hand or electric mixer, I will probably use a ready-made graham cracker crust, I don’t want to buy almond extract but do have vanilla. It might be hard to whip cream using a whisk but I’m sure it’s possible. I have apricot jam and that should be ok. So other than those little discrepancies do you think it might work? I don’t know why I don’t have a mixer or beater, Maybe trying to simplify my life at some time? Don’t know.
Hi there! You can make whipped cream with a large whisk, but it will take a bit of time (and some arm stamina!). A graham cracker crust works well. The almond extract is important for flavor, so I'm wondering what else you could add in its place. Do you happen to have amaretto at home?

Hi there, the almond extract is really important tot he flavor of this cheesecake, but you can swap it out for the seeds of 1 vanilla bean (or vanilla bean paste), if you prefer!

@@susangauthier3317 somehow I missed that you replied! I often use Bel Gioioso brand as well, so we can rule that out. The pie should definitely have frozen solid. This is a bit of a mystery (unless your kitchen was especially warm?). I'm stumped!

Cream cheese won't give you the same texture in this cake, so it's important to use mascarpone. However, you can find it at most grocery stores! Great question!

Nhung Trang this cake is frozen, which creates the rich, thick texture. It will soften as it sits (but like ice cream, it will eventually melt if you leave it out for too long).
