the HDPE resin in stone paper makes up around 20% of the weight, it is not toxic and can be recycled. The paper itself should break down in about one year of high UV radiation and should even be safe to be burned. It is comparably eco-friendlier than normal paper, because it does not need bleach, water and less energy to be produced.

Paper uses forests that are planted for the purpose of being turned into paper, so it is sustainable.
The unsustainable parts are the transport, pulping and bleaching.
Stone paper has a similar problem since it uses plastic binders to hold the stone particles together and give the paper its flexibility.

I don't agree on it being eco-friendly. It's using a none renewable resource, stone to be exact. Whereas paper made from trees is renewable. Let's say I plant 2 trees, whenever I cut down 1. That is renewable. Main issue is people, companies don't replant the trees. Even if they do they don't help them grow. Thus making trees, a renewable resource, non-renewable. Still, stone is fundamentally non renewable, and trees are renewable.
P.S. I do acknowledge stone being far more abundant. But, my point isn't that. Once it's mined or harvested, you have to go somewhere else. You can't replant or farm it at one place.

While I’m not 100% convinced it’s a more eco-friendly choice overall, I will add that the stone paper is apparently made from calcium carbonate that is already sourced from construction industry waste. So it’s not technically renewable but they are not using anything from the environment that wasn’t already taken by someone else. Calcium carbonate is so abundant that I doubt we’re going to see a scarcity issue before we’re mining asteroids.
If they were mining new rock for the paper instead of using waste products I’d be more concerned, and I’m not sure how biodegradable this stone paper is… but calcium carbonate is probably also infinitely recyclable.

But I do know that for production alone, it uses less energy, produces less emissions, and less wasted compared to both paper made from new pulp and paper made from recycled pulp (from a paper on stone paper by L. Indriati, M. A. Nugraha, and Y. S. Perng). The website where this particular stone paper also has a chart about this when you view a product.
I should also say that stone paper can be comparatively better that traditional paper in terms of environmental impact, but I don't know to what degree. That is just from what I've read and know.

If I had to guess I would say that it introduces micro plastics to the area it breaks down in. Additionally, trees cut down for paper are generally not endangered species and are often specifically grown and maintained for the purpose of making paper. By buying a tree paper alternative, market demand for tree paper is reduced so land owners would be more inclined to switch to a more profitable business and cease to replant and maintain their trees. The trees that are being cut down and often burnt away in the Amazon rainforest are being removed to create room for cattle farming as demand for beef continues to increase.
Stone paper does also offer environmentally friendly aspects though. It utilizes waste products from other industries and it is more durable than regular paper so long as it is not left in direct sunlight for an extended period of time. It is also more easily recycled than regular paper, provided the recycling facility realizes that it is stone paper and not tree paper
