Organic ginger isn't irradiated to rid fungus so it works great for this. I don't peel ginger. I also add two lemons. I do puree my ginger for a cloudy drink, I've done it both ways. Right, no chlorine. One tablespoon of sea salt. Yep, five days in pantry. Love it. Thanks for your vid, good one!

Rather than burping the jar every day, which one might forget, it is better not to close the lid tightly. You can close it and that turn back half a turn and allow the lid to rattle. That way you won't have pressure build-up. After the fermentation is done (when the liquid is no longer "boiling" and you don't hear the fizzling sound when you open the lid), you can then tighten the lid if you want to.
Note also that more sugar means more alcohol will be produced.
Do you know if it ends up being sort of sweet (depending on the amount of sugar of course) or is all of the sugar consumed in the fermentation process? Thanks.
It depends on how long you let it ferment. If you ferment it until there is completely no bubbling, then all the sugar will have been converted to alcohol, and the result won't be sweet, but you can also consume it before it reaches that stage.

Scoby has yeast + bacteria. Since we are primarily fermenting sugar here, I would prefer to use just yeast (regular baker's yeast would work).
Can you use milk whey or milk kefir whey??
Can I just suggest leaving the skin on. That's where a good amount of nutrition is stored.

Yes, yeast consumes sugar and produce alcohol. How much depends on the amount of sugar added. If you add a lot (like 120 to 150 gr per liter), this will turn into ginger wine.
@@DMichigan so if I go light on the sugar I can add something like stevia to sweeten later and avoid the alcohol?
@@JamieEckles I haven't done it but I believe you could do that because yeast does not ferment stevia. You can actually add them at the same time you add sugar as yeast won't consume the stevia anyway.
What I have done is I go light with sugar, and after the fermentation is finished, I bring the liquid to just below the simmering point to kill the yeast (the yeast is killed before that temperature, but visually it is easy to detect a low simmer), then I add sugar.
