HOW TO MAKE DANDELION JELLY

  • RECIPE IN DESCRIPTION! I made Dandelion Jelly! This was a treat I had heard about but had never tasted, let alone made, so I had to try it. I have seen a couple UA-cam channels try this but I wasn't going to take their word for it, so here is my experience to share with you, so get your toast ready because I have a jelly recipe you must try!
    You will need to be set up for canning, so a large pot that will hold your jars with room for water to be at least two inches above the tallest jar, and your jars will need to sit on a platform so they don't rest on the bottom of the pot. A tablespoon measurement. Also tongs, I use rubber bands on my tongs to give them extra grip! A wash rag to keep your jars clean is very helpful, as you will see me doing this.
    You will also need the following:
    -1 package of pectin
    -1 lemon
    -Yellow food coloring
    -2 cups of dandelion yellow petals, no green!
    -4 cups of sugar
    -4 cups of water
    -1 strainer
    -1 whisk
    -1 ladle
    Lets begin!
    Gather dandelion flowers, you will need to gather enough for 2 full cups of petals. Separate the yellow petals from their green casings, you do not want the greens because they can be bitter! Collect 2 cups of yellow and place them in a large bowl. Add 4 cups of boiling water to the petals, as if you are making tea. Give it a quick stir and cover the bowl to place in the refrigerator for 24 hours. This will allow the "tea" to steep.
    After 24 hours, you may remove the "tea" from the refrigerator, it is ready to begin making jelly!
    Take your large canning pot and fill it with water. Place your platform in the bottom of the pot so the jars do not rest against the floor. Boil the water, we will be using this to sterilize your jars. Using your tongs, place your jars and lids into the boiling water for at least five minutes, this will sterilize them and warm the jars for the hot jelly to be added. If the jars are not warmed they may crack when the jelly is added! Leave the water boiling for the jars to be added when full.
    Use your strainer to separate the petals from the "tea", getting all of them out so you are left with a brownish yellow water.
    Pour your liquid into a smaller pot, all four cups worth. Add 2 tablespoons of lemon juice, one package of pectin, and two drops of yellow food coloring for added color. Whisk this together and bring to a boil.
    When you have a boil, whisk in the 4 cups of sugar and allow mixture to boil for two minutes.
    Remove from heat and ladle your yellow mixture into the jars, almost full, with about a quarter inch of space left in the top of the jar.
    Use your cloth to make sure the jars and the lip are nice and clean before placing the lids on the jars and tighten your rings down finger tight.
    Return the filled jars into the boiling water using your tongs, and make sure you have at least an inch or two of water above the jars.
    Let jars set in rolling boiling water for ten minutes.
    Remove jars from water with your tongs and place on towel. Let jars sit undisturbed for 24 hours.
    Be sure to add the date to the lid, as sealed jars should hold a shelf life for at least 2 years or more.
    Your final product will be a little runnier than store bought jelly, but that is ok. After resting the jars for 24 hours try a taste!
    I personally love the jelly, and love to sneak a cheeky spoonful for a snack!

    Dandelions are so good for you! They are full of antioxidants and vitamins. Yellow food dye not so much. It accentuates skin problems and asthma, and hyperactivity in children. Good thing it’s not a necessary ingredient here. Your jelly looks good, and fun to try.

      The yellow dye is absolutely not necessary, it gives the jelly a better yellow color and that is all!
