    I wouldn’t recommend Dry aging any thin meats. It’s all about surface area. You lose a lot more meat on thin slices than thick slices

      @@SaltyTales if there is a next time, just trim the thin parts before the aging, leave the thick part, make sum tacos with the trimmings

      I would roll it into a tube form and tighten it that way the crust waste will be minimum

      I’ve dry aged enough that I was expecting that. Have to use big roasts for dry aging.

    Imagine my surprise when there was no pink inside the steak. But I know cap steaks and that marbling PLUS the dry age, overcooking will not ruin it. Good job Ninja

    That is why I love you guys. You try these techniques and different ideas and then I get to choose whether or not to do so. I personally would have been happy with %100 smoked and on my platter, that extra/different flavour can't be worth a loss of half of it. Love you as always! Moz

My deli boss back in the day always said if theres any question there's no question what to do lol. Sad but worthy dacrifice for what was left though so glad you two rocked a good meal.     Great job Ninja! After i look at your video I would recommend rolling the ribeye cap into a big chunk then tie it together with butcher twine before dry ageing it. That way it reduces the loss when trimming since the meat isn't as thin. None the less excellent work, keep the videos coming my brother! Your doing awesome.

      Everyone, Guga has commented on more than one video with a *full* explanation!
      If this explanation is true or not, we obviously can't tell, but what he says is that Ninja lives over an hour from where he lives, and he's decided to work from home exclusively for his channels, so it's not feasible for Ninja to join in.
      Again, this is what is being said by Guga, and it does seem to conflict with Ninja somewhat, but the point is that Guga has publicly responded with his answer.

    I’ve never bought just ribeye cap but I ALWAYS pick out the best marbled and biggest capped ribeye when I buy a ribeye. Thanks for the great videos mr and mrs ninja.

    If you ever plan on retrying this, try rolling it up tightly and trussing it. You might get a better yield.

    Ninja if you’re gonna try this again you should try rolling it up and tying with butchers twine so that less surface area is available to dry out so much

    I love the cap. I used to peel them off the whole rib, roll and tie them then smoke them. Never thought about dry aging them though. Looks deeeeeelicious!

    Try butter age the rib eye cap, you might get a little less flavour but I think it would be worth it considering the amount of meat you get to save

    Amazing enthusiasm; I love that energy for meat cuts and BBQ ... my kind of people. One small suggestion; maybe recommend alcholic/ non-alcholic beverages and side dishes to pair with the meats you cook. Would be awesome to know what beer pairs well with a dry aged rib eye for example.

      It is not too expensive. that piece was about $35 but the lost was huge... Hated it! but the taste... OMG Loved it! 😃😃😃

    Would you recommend tightly rolling the rib eye cap before starting the dry aging process? Might not lose as much doing it that way. 🤷🏻‍♂️

    Wow 😳 that sucks that u lost so much meat man! I was so excited when I seen u bagging it up! I wish so bad to go back in time, my late uncle told me (knowing I loved steak since I could chew) to get aged steak. He explained it to me in a way that made it seem like I was eating rotten meat. But! If I knew then what I kno now I would slap my younger self and got the aged steak. I’ve never have had another opportunity since then 😭 lol.

      I really beliave that dry age enhances the flavors and make any cut reach it's full potential.. Definitely this cut is not made for it but that is something we didn't know before testing it 😃😃 Will keep testing until something better happen! Thank you so much brother!

    I have a question. If you have a long piece of meat, such as a ribeye cap or a skirt steak, can you roll it up to make a thicker roast shape and that will allow it to dry age without losing more steak?
    The idea is this: exposed surface area is lost, so you need to adjust the form of the meat so that less is exposed.
    A ribeye cap is a poor choice unfolded but if you roll it up, you have less exposed meat.
    My guess is the dry age process, keeping it vacuum sealed, will keep the steak in that rolled form when you trim.

    Realmente parece exquisito 😋 como consejo para no perder todo ese porcentaje de carne siempre está la maduración en húmedo, las bolsas de membrana solo dejan un 5% de humedad eso hace que cuanto más fibras intramuscular tenga el corte mayor sea la pérdida del producto, en Argentina antiguamente antes de la aparición del refrigerador se sumergía la pieza en grasa bobina refinada y derretida pero a baja temperatura y se dejaba por largos periodos de tiempo, hay algunos que todavía lo utilizan a este método por el sabor intenso de la carne añejada, yo lo probé con 20 días de maduración y es sumamente exquisito, lo recomiendo como prueba, saludos cordiales desde Argentina, se los quiere mucho gente 🤝

    I wonder if you could have rolled the entire cap into a tube. Then sealed.
    It would be a lot thicker.
    Or you could tie it with twine like guga did to make it thicker.

      The problem with that is that the cut is a little tick and big to roll, if you roll and tide it the lost will be similar... I'm testing a few things and see what works. Thanks for the ideas! 😃😃

    I bet Georgie didn't get a share of that. There wasn't enough to share really. Something I heard from a butcher was if you have a grinder you can grind up the loss in beef and make burgers from it but I don't know if I would try it.

    I quit dry ageing. For one, I got tired of cutting much of it away. That's a huge part, especially when I pay so much for quality meat. Second, it does taste great, but I also get great taste from non-aged meats.
