There are actually two popular vesions of this dish: real "pinakbet" of Ilocos region with sweet potato and thick sauce. This is the more popular all across the Philippines, called "dinengdeng". I suggest putting the egg plants the last because they're the quickest to cook. Also, allow the squash to "melt" a bit into the sauce. The sweetish taste and pale yellow color will give the sauce a good mix of sweet flavor. One last thing; lightly fried samgyupsal and shrimp will elevate the dish if you don't want pure vegan version of "dinengdeng".
Pinagsasabi mo. One pot method ang pinakbet walang gisa gisa. Tsaka walang kamote ang pinakbet kasi di naman nag-shrunk iyon. Traditionally walang kalabasa ang pinakbet.

Here in korea when I cook pinakbet I just boil small amount of water with doenjang( soybean paste) then put my vegetables including the onions, and garlic last when its almost done. Then I sprinkle sesame seeds.

Originally pinakbet is not sautéed, it is boiled in a clay pot with all the ingredients in it. But if sautéing, you should always sauté it with tomatoes and put string beans always at last since string beans and okra are the fastest to cook. You can also add meat to your pinakbet and try using bagoong isda ( ginamos) instead of dayok (alamang) and add some green chilis and ginger
